Introduction to Yirgacheffe Coffee
As a prominent representative of fruity acid coffees, Yirgacheffe not only delivers distinct white floral notes, green tea, and citrus flavors reminiscent of fruit tea, but has even been described as "coffee enters, a hundred flowers bloom"—a testament to its immense popularity. The Origin and Terroir
The name Yirgacheffe originates from Yirgacheffe town, located in southern Ethiopia and also one of the country's highest-altitude growing regions. Coffee trees here are mostly planted on fields approaching 2,000 meters above sea level, with the highest reaching around 2,100 meters. As altitude increases, the growing environment becomes more ideal, and the flavor advantages of the coffee fruits become more prominent. Lakes Turkana, Abaya, and Chamo within the town bring abundant water resources. When you look around, you can see villages shrouded in mist, combined with spring-like weather year-round, gentle breezes, cool and humid conditions—these elements nurture Yirgacheffe's unique floral and fruity aromas.
Unique Production Model
Unlike American countries accustomed to large-scale estate processing, Ethiopia's coffee is mostly grown by individual small farmers, typically on plots around 1 hectare with modest yields. Therefore, they regularly send their harvest to town or nearby cooperatives for unified processing. Cooperative management not only improves the quality of green coffee beans but also provides farmers with more stable income. Often, when we purchase Ethiopian coffee beans, we see detailed information like an ID card—such as origin, post-processing, variety, grade classification, etc.—finally named after cooperatives. Gotiti and Adado are the most commonly heard Yirgacheffe processing teams on the market.
It's worth noting that the Gotiti Cooperative is located in the Woreda production area at the southeastern end of Yirgacheffe. It's a mature production team with about 300 farmer members. Due to the uplifting and bright flavors of their Yirgacheffe, it was established separately in 2012. Many small farmers were originally members of the Woreda cooperative, so their coffee production skills are unquestionable. Roasting and Brewing Philosophy
FrontStreet Coffee believes that Ethiopian coffee's greatest characteristic lies in its rich fruit acidity and floral aromas, praised by many coffee enthusiasts as a "fruit bomb." To highlight such explosive fragrances, the roast level naturally cannot be too deep, so FrontStreet Coffee uses medium-light roasting to showcase Yirgacheffe's delicacy.
Due to Yirgacheffe's light roast, the coffee beans have a hard texture and require 92℃-93℃ high-temperature water to activate the floral and fruit flavors in the coffee. FrontStreet Coffee recommends a medium-fine grind (Chinese standard 20-mesh screen pass rate of 78%). Too coarse a grind cannot extract body substances, resulting in thin coffee. Too fine a grind can easily lead to over-extraction at high water temperatures, making the coffee prone to bitterness.
FrontStreet Coffee's Pour-Over Brewing Recommendations
Filter: V60
Water Temperature: 92-93℃
Dose: 15g
Coffee-to-Water Ratio: 1:15
Grind Size: Fine sugar size (20-mesh screen to 80%)
Three-stage pouring: Use twice the amount of coffee in water to moisten the coffee bed, forming a dome and steaming for 30s. Then use a small water stream to pour in circles from inside out to 125g for the first stage. Wait until the coffee bed drops to half the filter cup's height, then continue with the same fine water stream for the third stage to 225g. Remove the filter cup once all coffee liquid has filtered through, taking about 2 minutes. After the coffee from the filter cup flows into the lower server, remove the filter cup, then shake the coffee liquid in the server evenly to enjoy Yirgacheffe's flavors starting from high temperature.
When washed Yirgacheffe coffee beans are ground into powder, you can smell honey and jasmine fragrance. When FrontStreet Coffee pours hot water, it begins to release subtle berry flavors. The hand-poured black coffee enters with bright lemon, citrus, and green tea notes. As the temperature changes, it reveals berry, cream, and sugarcane aftertastes, with obvious sweet aftertaste and a clean, sweet mouthfeel.
