The Art of Cold Drip Extraction
Cold drip coffee is created by allowing ice water to permeate coffee grounds drop by drop, thereby extracting the coffee liquid. Taking FrontStreet Coffee's cold drip preparation method as an example, we typically use 60g of coffee grounds to extract 600ml of coffee liquid (which yields a concentrated brew), with ice water dripping at a frequency of approximately 7 drops every 10 seconds.
The complete dripping process takes 6-7 hours. Consequently, cold drip coffee ranks among the most time-consuming coffee preparation methods.
The Importance of Cold Maturation
However, the completion of the dripping process doesn't mean the cold drip coffee is ready. If you taste freshly dripped cold drip coffee, you'll find it lacks flavor, feels somewhat thin in texture, and may even have an unpleasant astringency.
Therefore, after the dripping process finishes, the cold drip coffee liquid typically needs to be transferred to a sealed bottle and placed in a refrigerator for low-temperature maturation (some might call it "low-temperature fermentation"). During this cold maturation process, the esters that provide fruit-like aromas in coffee hydrolyze into carboxylic acids and alcohols, with the alcohols contributing to that wine-fermented aroma.
Typically, cold drip coffee only needs to be refrigerated for 8 hours or more for its texture to become smooth and mellow, exuding a rich wine-like and fermented aroma that creates a sensation reminiscent of drinking wine. Moreover, the longer cold drip coffee is stored, the more intense its "wine-like flavor" becomes. For instance, when FrontStreet Coffee uses Kenya Assalia coffee beans to make cold drip coffee, after 12 hours of maturation, its flavor profile reveals a rich fruit wine aroma, bright and clean tomato acidity without losing depth, and a cool, fermented sensation.
Understanding Coffee Fermentation
In fact, cold drip coffee isn't the only method that can produce "wine-like flavors." If you brew a pour-over coffee and forget to drink it, the next day you'll notice it has also developed a fermented wine aroma, along with some notes of rotten fruit and spoiled sourness.
Hot-brewed coffee will similarly develop wine-like aromas over time through fermentation, but this fermentation process is uncontrolled and highly prone to spoilage. The low-temperature extraction of cold drip coffee helps inhibit bacterial growth, while sealing and cold maturation further slow down the coffee's fermentation rate and prevent bacterial proliferation.
Optimal Consumption Timeline
