Ethiopia's Pride—Yirgacheffe Coffee: Rich Varieties, Complex Flavors, and Enchanting Aromas

Ethiopia is a land full of wonder. As we mentioned here, all the Arabica coffee varieties we've drunk and haven't yet drunk originate from this country.
Ethiopia has nearly 2,000 recorded coffee varieties, including 1,927 native varieties and 128 introduced foreign varieties. So in terms of appearance alone, Ethiopia's coffee varieties are like a "grand view garden"—everything is included: long, short, thin, fat...
Long Bean Varieties
Long-bean varieties can be found throughout Ethiopia's coffee-growing regions. Based on actual observations, the western Jimma region, including Limmu and Kaffa, has more long-bean varieties, while they are less common in Sidama or Yirgacheffe.
Small Bean Varieties
Small-bean varieties have a relatively round appearance and very small beans, mostly between 14-15 mesh. This variety should be the most familiar to us, as we often see them in Sidamo and Yirgacheffe. I've also seen them in a Harrar sample and in green coffee beans sold locally in Jimma. Compared to other regions, Sidamo, Yirgacheffe, and surrounding Arsi and Guji areas have more plantings of these small-bean native varieties.
Coffee Cultivation Methods
In addition to the numerous coffee varieties, coffee cultivation methods also affect the variety mixing situation in Ethiopian coffee beans.
Ethiopia's coffee cultivation is divided by scale and model into:
● Forest Coffee (8-10%): Coffee trees coexist with other crops in pristine forests without any artificial management. Farmers regularly harvest coffee cherries.
● Semi-Forest Coffee (30-35%): Coffee tree planting areas are between forests and farmers' living areas. The coffee trees are the same natural varieties as forest coffee, and farmers manage the coffee tree planting areas and plant other economic crops.
● Garden Coffee (50-55%): Coffee trees are planted around farmers' living areas and are mostly self-planted by farmers.
● Plantation Coffee (5-6%): Large private growers with more processing facilities and production capacity.
FrontStreet Coffee's Sidamo and Yirgacheffe coffee cultivation mostly belongs to the garden coffee model, where coffee farmers plant coffee trees near their living areas, harvest them themselves during the harvest season, and then send them to nearby processing stations built near water sources for unified processing (or they are uniformly purchased by middlemen). Except for a small number of plantations that have the strength to independently plant, harvest, and process green coffee beans, many coffee beans from different regions and different cultivation varieties are centrally processed by processing stations and then sent to auction houses for official evaluation and grading. This is why many Ethiopian coffee beans are named and distinguished by processing stations or cooperatives, and it's also one of the reasons why the same batch of coffee beans contains multiple coffee varieties. Even coffee beans produced by the same processing station can have obvious flavor differences between different batches.

About Kochere Region
Kochere is located 25 kilometers southeast of Yirgacheffe in Ethiopia—a small producing region that has become prosperous from coffee production. It is one of the three famous micro-regions in Yirgacheffe. The local population is about 100,000 people, with coffee beans as their main source of income. The processing equipment in this region is very advanced. The renowned coffee review website Coffee Review gave Kochere washed beans a high rating of 94 points.
Ethiopia has eight main coffee-producing regions: Nekempte (Lekempti), Gimbi, Limu, Illubabor, Djimma, Harrar, Teppi/Bebeka, Sidamo, and Yirgacheffe. Among these, the more well-known specialty coffee regions are Nekempte (Lekempti), Limu, Harrar, Sidamo, and Yirgacheffe. Yirgacheffe is located in the Sidama administrative region of Africa, Ethiopia, showing that Yirgacheffe belongs to a smaller area within the Sidama producing region.
Yirgacheffe itself is a small town with about 20,000 people. Three neighboring small regions—Wenago, Kochere, and Gelena Abaya—have coffee flavors almost identical to FrontStreet Coffee's Yirgacheffe, so they are also classified under the Yirgacheffe regional category. Whether in culture or geographical environment, Yirgacheffe is similar to neighboring Sidamo, but Yirgacheffe seems to be more favored with uniquely advantageous conditions. Kochere is located in southwestern Ethiopia, about 25 miles north of the famous Yirgacheffe town. The production model mainly involves local small farmers sending their output batches to cooperatives for unified processing. The local Chalalacktu village has about 100,000 people who rely on coffee for their livelihood, and related production activities have become their main economic source. Due to the income from coffee production, the local living standards are much better than many Ethiopian villages, with complete health facilities, higher education institutions, etc. Advanced processing equipment has always enabled Kochere region's coffee to maintain high-level performance in washed processing, carrying clean sweetness with complex notes of molasses and citrus.
