Central America: The Coffee Paradise
Central America generally refers to the narrow strip of land in the middle of the American continent, south of Mexico and north of the Panama Canal, also known as the "Central American Isthmus." It includes seven countries: Guatemala, Belize, El Salvador, Honduras, Nicaragua, Costa Rica, and Panama, all of which produce coffee.
There is another classification that includes the Caribbean region and the island nations and territories of the West Indies within the scope of Central America. Among these, many countries and regions also produce coffee, such as Jamaica (producer of Blue Mountain Coffee), Cuba, Haiti, the Dominican Republic, Puerto Rico...
In the coffee world, the classification is slightly different: "Central American coffee" includes Mexico and the seven Central American isthmus countries; while coffee from the Caribbean region is distinguished as "Caribbean island coffee."
The terrain of the Central American Isthmus is dominated by highlands and mountains, forming the middle section of the Cordillera mountain system along the Pacific coast. The western side belongs to the Pacific coastal volcanic zone, with many volcanoes and earthquakes; the eastern side has narrow plains facing the Caribbean Sea and the Gulf of Mexico, with a hot and humid climate; the intermountain basins have a mild climate with abundant flowers and plants. These conditions have created many unique microclimates throughout the Central American mountains, and combined with the accumulated volcanic ash and fertile soil, provide an excellent foundation for producing high-quality coffee.

Selection Reason: Las Lajas has two types of natural processing, determined by the number of turns during the processing:

Black Soul (Alma Negra): Placed on raised beds for drying, turned only a few times per day
"Black Soul" has fewer turns than "Black Pearl," resulting in higher fermentation but also greater risk of failure. However, under the careful processing of Las Lajas, this "Black Soul" has become a masterpiece among natural processed beans, with rich flavors, thick and round mouthfeel, and long aftertaste. The lively grape fermentation aroma perfectly blends with the full sweetness of mature tropical fruits.
Geisha and Pacamara
Geisha
It is generally believed that Geisha originated from a small town called Gesha in western Ethiopia, first discovered by former British ambassador Richard Whalley. This variety was sent to Kenya and then to a research institute in Tanzania. In 1953, Costa Rica introduced Geisha from Tanzania, and in 1963, Don Pachi Serracin brought the first batch of Geisha to Panama.
Geisha has been cultivated in Central America for over 50 years but remained obscure for many years. Geisha trees have an unremarkable appearance, with larger vertical spacing between branches than typical coffee trees, and larger internodal spacing than other varieties. This means flowering and fruiting are less dense, making it a low-yield variety. Therefore, it was considered economically valuable and usually planted on the periphery of coffee farms as windbreaks.
