The Aricha processing station is located in Ethiopia's most renowned specialty coffee producing region - Yirgacheffe.
There are approximately 650-700 small-scale coffee farmers near this processing station. Farmers deliver their ripe coffee cherries here for processing in exchange for cash.
After the processing station selects high-quality coffee cherries, the whole coffee beans are placed on African drying beds (raised platforms) for natural drying. They are turned every 2-3 hours to avoid excessive fermentation of the bottom coffee. Because African drying beds prevent direct contact between coffee cherries and the ground, they provide better ventilation during the fermentation process. This effectively prevents excessive fermentation during natural drying and prevents the absorption of earthy, grassy, or other off-flavors, thus creating very clean tropical fruit flavors.
After processing, the coffee beans must undergo another round of manual green bean selection in the producing area after removing the "parchment," followed by cupping and sample approval. Finally, they must pass the strict defect rate grading and flavor evaluation by the Ethiopia Commodity Exchange (ECX) before being labeled as G1 highest grade for export.

Because it's a micro-batch, it's not packaged in the common 60kg jute bags, but rather in rare 30kg GrainPro+ small jute bags as transport packaging, showing the level of attention given to it.

The first time I experienced the unforgettable rich hazelnut cake aroma, the perfect fusion of cocoa bean fragrance and creamy nutty aroma, along with the unique full, warm aroma characteristic of natural processing.
Mixed with subtle notes of peach, orange, cinnamon, papaya, and date-like dried fruit aromas.

Pairs well with: Cookies, or nuts like almonds, croissants. Should not be too sweet.
I must say, the increasingly humid climate makes the coffee aroma unfold more slowly and deliberately, like the calm and humor that only comes with middle age.
Different from the last tasting experience, this time there's more intense fruit aroma and citrus flavor upon entry, making me feel more refreshed.
