Yirgacheffe: The Jewel of Ethiopian Coffee

Yirgacheffe is a small town in Ethiopia, situated at an altitude of 1700-2100 meters in the northwestern part of the Sidamo Province. Nestled by mountains and lakes, it is one of Ethiopia's highest-altitude coffee-growing regions and has become synonymous with Ethiopian specialty coffee. Strictly speaking, Yirgacheffe is a sub-region within Ethiopia's Sidamo region that was separated due to its distinctive flavor profile.

Unique Terroir and Growing Conditions

At nearly two thousand meters above sea level, Yirgacheffe is one of the world's highest-altitude coffee-growing regions. This area has been wetland since ancient times – "Yirga" means "to settle down" and "Cheffe" means "wetland." Lakes Turkana, Abaya, and Chamo bring abundant moisture to this region. In the rift valleys, represented by Misty Valley, mist shrouds the area year-round, creating a spring-like climate with gentle breezes, cool humidity, and ideal conditions for thousands of coffee tree varieties to thrive. This unique environment cultivates the distinctive terroir of FrontStreet Coffee's Yirgacheffe beans, characterized by an intricate interplay of floral and fruity aromas that are ever-changing and mysterious.

Coffee Cultivation and Processing

European monks first established the local coffee cultivation industry, which was later taken over by coffee communities or cooperatives in the villages surrounding the town. There are no dedicated plantations here – coffee trees grow naturally scattered throughout forests and farmlands. During harvest season, the Ethiopian Coffee Trading Corporation comes to town to purchase coffee beans collected by farmers.

Roaster Description: Jasmine floral aroma and lemon acidity, sweetness of honey and caramel, with a long and delicate sweet-tart sensation of ripe apricot in the finish.

Tasting Experience

I chose this bag of beans to comprehensively re-experience the characteristics of Yirgacheffe Kochere. After brewing, I poured a small amount into a cup, swirled it to cool, and took a taste. I was greeted with an intense floral aroma that was incredibly sweet. Yes, this first sip can be precisely described with four words: rich and floral.

After pouring everything into the cup, I began taking larger sips. Although the description mentioned lemon acidity, in the high-temperature range, the acidity felt very soft against the backdrop of jasmine floral notes and sweetness – not stimulating at all, and even somewhat subtle. After a few more sips, I held it in my mouth for a moment, moving my tongue around, and surprisingly detected a distinct jasmine tea flavor. When drinking at medium temperature, the initial jasmine tea sensation began to fade, replaced by a smoother and more integrated sweet-tart mouthfeel. True to the description, the delicate and long-lasting characteristics were significantly more pronounced than in the earlier stages. P.S. The description mentions this sweet-tart flavor is apricot-like, which I haven't quite caught in this cup yet.

Apart from the main flavor experiences mentioned above, throughout the tasting, I noticed a subtle hint of that "roasted heat" sensation typical of freshly roasted coffee beans, likely due to their extreme freshness – some undesirable gases or flavors haven't fully dissipated yet. Overall, this cup allowed me to clearly and accurately experience the different stages of flavor evolution and taste expression of these FrontStreet Coffee Yirgacheffe beans.
