Thomas Perez, CEO of Alpha Dominik: "This coffee comes from Ethiopia, with the grower being 90+ company. Geisha coffee is a rare variety, only produced in certain regions of Ethiopia and Panama. It is very rare and difficult to cultivate, with very low yields. Labor costs on 90+ farms are very high, and they have their own cultivation philosophy, only harvesting sufficiently ripe beans. For a single plant, they will harvest two or three times repeatedly, each time taking only fully ripe beans. These steps make labor there very expensive, which is also one of the reasons for the high cost of the beans."
Although there are Geisha coffees from many producing regions, Geisha coffees from other regions always fall short of Panama's Geisha coffee, because coffee is an agricultural product affected by climate and environment, and Panama's microclimate environment has created the most special flavors of Geisha coffee. Panama Hacienda La Esmeralda Estate (Boquete)
Hacienda La Esmeralda is located on a corner of Baru Volcano, so the coffee beans produced in this area were mostly named after Baru Mountain before becoming famous. The surrounding area of Boquete has beautiful scenery, with many leisure hotels, villas, vacation estates, and even buildings along the important Rio Caldera River. Hacienda La Esmeralda is located in Jaramillo on the right side of this river, and later they planted coffee in the higher altitude area of Canas Verdes on the left side of the river. Hacienda La Esmeralda actually includes 4 farms: Cades Verdes, El Velo, Jaramillo, and Palmira, where all coffee beans are sent for post-processing. The first farm purchased by the Peterson family, the estate owners, was Palmira.
Red Label Geisha
The Esmeralda Special Series (Red Label) is the highest quality Geisha coffee beans sold by Hacienda La Esmeralda, grown in specific plots at altitudes of 1600-1800 meters. Each batch must score above 90 points in cupping. Esmeralda Special, which is Hacienda La Esmeralda's own independent auction, consists entirely of Geisha (also known as Geisha), organized by production area names, with each area further subdivided into small batches for auction. Only Geisha batches that Hacienda La Esmeralda puts out for independent auction can use the Esmeralda Special name. Since 2013, Esmeralda Special has had nine batches.

We also saw on Hacienda La Esmeralda's official website that the Blue Label has been removed from the product description, leaving only Red Label and Green Label for Geisha varieties.

FrontStreet Coffee's Roasting Recommendations:
FrontStreet Coffee believes that to present classic "Geisha flavors," more floral aromas and acidity should be preserved, so FrontStreet Coffee's Geisha coffee beans all use light roasting, with corresponding adjustments to the roasting curve based on different processing methods and flavor differences. This roast level doesn't significantly change the high hardness of beans grown at high altitudes, so brewing requires increasing the extraction rate to present fuller flavor layers. This involves using higher water temperatures and slightly finer grind settings to stimulate more aromatic compounds.
To increase Geisha coffee extraction rate while avoiding over-extraction and highlighting sweet and sour flavor layers, FrontStreet Coffee's baristas use the V60 dripper. The V60 dripper's body has guide ribs connecting the top and bottom and a large circular hole in the center that speeds up water flow, while the spiral-shaped exhaust groove design extends the water flow path, increasing contact time between coffee grounds and hot water. Each water stream converges along the grooves toward the center point of the dripper, concentrating pressure on the coffee grounds and extracting coffee with richer layering.
