BOQUETE
The Boquete region is the most renowned coffee-growing area in Panama. Its mountainous terrain creates numerous microclimates. The relatively cool weather and frequent fog help slow the maturation of coffee cherries, which some believe resembles high-altitude climate conditions.

VOLCAN-CANDELA
The Volcan-Candela region produces most of Panama's food and some astonishing coffees. The region is named after Baru Volcano and Piedra Candela city, bordering Costa Rica.

RENACIMIENTO
Renacimiento is a coffee-growing region in Chiriqui province, bordering Costa Rica. The area itself is relatively small, making it one of Panama's lesser-known specialty coffee regions.

Panama's premium coffee is grown in the western part of the country, near Costa Rica and close to the Pacific. The most famous coffee comes from the Boquete district in Chiriqui province, with Volcan, Santa Clara, and Candela also being well-known. Other regions include David, Remacimientos, Bugaba, and Tole districts. Only coffee grown at altitudes between 1,300 and 1,500 meters is considered specialty coffee.
Catuai (Catuai):
"Catuai" is a hybrid of Mundo Novo and Caturra, truly a second-generation crossbreed. It inherits Caturra's advantage of low tree height. The variety name Catuai comes from indigenous language, meaning "very good." As a member of the Arabica family, Catuai is relatively high-yielding.
Cupping Notes: Dried fruit aroma, rich fruit acidity, prominent sweetness on entry, lemon, orange, cranberry, green tea, smooth and even texture, soft with subtle floral notes, long-lasting sweet aftertaste.

Panama's regional coffee definition is based on how coffee is produced rather than geographical division. Previously, when coffee was more widely cultivated and the regions listed below were smaller and closely clustered, coffee beans produced could be combined as a single unit.
Brewing Instructions
Hand-brewed Panama Flint Estate. Use 15g of coffee, medium grind (Fuji mountain-style blade grinder #4), V60 dripper, water temperature 88-89°C. First pour 30g of water and let bloom for 27 seconds. Pour to 105g and pause. Wait until the water level drops halfway, then continue pouring slowly until reaching 225g total. Avoid the tail end. Water-to-coffee ratio 1:15, extraction time 2:00.

Catuai (Catuai):
Catuai is an artificial hybrid coffee variety of Caturra and Mundo Novo. Catuai has good resistance to natural disasters, particularly wind and rain.
Catuai trees are relatively low-growing. Compared to other coffee trees, Catuai's fruits grow more firmly and are not easy to harvest. The fruits come in both red and yellow varieties. To date, no significant taste difference has been found between yellow and red fruits. In fact, some cuppers have found that while coffee processed from yellow fruits may have good acidity, the clarity of the coffee flavor is inferior to that of red fruits.
Catuai was cultivated in Brazil and is now widely planted throughout Central America.
