What is Cold Brew Coffee?
Cold Brew Coffee first originated in the United States and gradually influenced Japan and European countries through social media platforms like Instagram. After Starbucks officially launched "Cold Brew Coffee," it finally became popular worldwide.
As its name suggests, cold brew coffee is coffee extracted with cold water, making it a pure "iced coffee." Similar to cold-brewed tea, it achieves a more mellow and balanced coffee through long-term, low-temperature extraction.
Cold Brew Coffee vs. Iced Coffee
The iced coffee we typically refer to is hot coffee that has been extracted at high temperatures and then rapidly cooled using ice cubes or ice water. Cold brew coffee, as mentioned above, is a pure "iced coffee" extracted through low-temperature, long-term processes.
Coffee that hasn't undergone high-temperature extraction inhibits the release of tannic acid and caffeine from the coffee beans, resulting in cold brew coffee with a milder, sweeter taste that's neither overly acidic nor astringent.
Additionally, because the principle of making cold brew coffee is very simple—you just need to master the coffee-to-water ratio and let it steep for an extended period (12+ hours)—it has become beloved by many office workers. Grind and brew at home the night before, refrigerate overnight, and wake up to icy cold coffee the next morning.
Moreover, it's said that cold brew coffee can be stored longer without losing its flavor. In summary, cold brew coffee is truly a blessing for black coffee enthusiasts!
Making Your Own Cold Brew Coffee
Ingredients (450ml)
- Coffee beans: 40g
- Cold water: 500ml
★ The coffee-to-water ratio should be slightly higher than your regular pour-over ratio. Once you become familiar with the process, adjust according to your personal taste. The recipe uses 40g beans to 500ml water because I still add ice cubes when drinking, making it more concentrated. If you don't add ice cubes, you can reduce it to 30g:500ml.
★ When shooting this recipe, I used light-roasted FrontStreet Coffee Elida coffee beans, so the brewed coffee color appears lighter. I had left these beans unused for a long time because they were really too acidic... However, the cold brew method made their acidity less noticeable.
Method
❶ Weigh coffee beans/powder: Weigh the coffee beans and grind them into powder. Finer grinds require shorter extraction time, while coarser grinds need longer extraction time.
❷ Cold water brewing: Fold the filter paper, place it in the teapot's filter, pour in the coffee powder, then slowly pour cold water into the pot.
★ There are many brewing methods—you can also use a French press and simply press down. Or directly add water to coffee powder and filter before drinking. I simply used the tools I had on hand.
❸ Cold extraction: Place the coffee in the refrigerator overnight to allow for complete extraction.
