Pour-over Butterfly Coffee

Origin and Region

The Boquete region in Panama, located in the Chiriquí province bordering Costa Rica, is renowned for producing the famous Geisha coffee and is world-famous for high-quality Arabica coffee. Panamanian coffee is famous for the Geisha from La Esmeralda Estate, and the region where La Esmeralda is located is also quite famous: the Boquete region in Chiriqui province. Boquete is a town in Chiriqui province, situated near the border between Panama and Costa Rica, close to the famous Baru volcano. Another important factor is the microclimate found in the highlands of Boquete, which is a unique resource for specialty coffee in this region. The east-to-west environment of Panama causes cold air currents to converge above 6,500 feet through the central mountain range, creating various microclimates in the Boquete area. This makes the temperature and rainfall extremely suitable for plant growth, so coffee trees planted here grow exceptionally well.

However, in such a blessed growing environment as Boquete, there's naturally more than just La Esmeralda's Geisha - a coffee king known for its exceptional flavor, quality, and value. But drinking Geisha daily would still be quite luxurious, and even if there's no financial pressure, having something as extravagant as Geisha every day wouldn't be quite right. The same goes for coffee - exploring widely brings more joy to appreciating coffee.

For easier harvesting, coffee farmers didn't reclassify them but directly processed all three varieties together. Later, after Geisha became famous and prices soared, the processing plant began to apply refined washed processing to such coffee beans.

There are many washed processing methods today, but generally, after coffee cherries are harvested, floating beans are removed, then the pulp is removed, and the coffee beans are soaked in fermentation tanks. The enzymes in the water soften the mucilage attached to the inner parchment of the coffee beans, while natural yeasts break down the sugars in the mucilage. This process is called fermentation. After fermentation is complete, the coffee beans are moved to drying patios to dry. During the drying process, the beans need constant turning to ensure even drying. Finally, they are stored in parchment in warehouses, and only after green bean sellers place orders are they hulled and bagged. Coffee processed this way has a clean taste, emphasizing bright and lively fruit acidity, as well as clear fruit flavors and floral aromas.
