Ethiopia's Diverse Coffee Cultivation Methods

In Ethiopia, you can find various coffee cultivation methods: from vast wild coffee forests and semi-developed lands, to traditionally managed small plots, all the way to modern plantations—everything imaginable. Approximately 50% of coffee is grown at altitudes above 1,500 meters. Ethiopian coffee can be divided into nine major coffee regions based on the four different production methods mentioned above, including five specialty coffee areas: Sidamo, Yirgacheffe, Harar, Limu, and Lekempti, as well as four general commercial bean regions: Djimmah, Illubabor, Tepi, and Bebeka. Each region employs either natural or washed processing methods, and different processing methods affect the flavor. Currently, natural processing accounts for about 80%, while washed processing accounts for about 20%.

Pour-over Sidamo Brewing Guide

Hand-poured Sidamo. 15g of coffee grounds, medium-fine grind (Fuji Royal hand grinder setting 3.5), V60 dripper, water temperature 91-93°C. First pour 30g of water for a 27-second bloom, then pour to 105g and pause. Wait until the water level in the coffee bed drops halfway before continuing to pour. Slowly pour until reaching 225g total, discarding the tail end. Water-to-coffee ratio 1:15, extraction time 2:00.

The Ninety Plus Philosophy

"Ninety Plus" does not refer to all coffees scoring above 90 points in evaluations. Good coffee appears one year, disappears the next. Sometimes it emerges from different estates, each with different flavor characteristics. "Ninety Plus" refers to a premium coffee series of 13 flavor profiles. These coffees come exclusively from Ninety Plus Coffee, American specialty coffee creators. All are Ethiopian heirloom old varieties, cultivated in ecological environments until maturity, then processed to artistic standards for flavor optimization. The processing is Ninety Plus's specialty—they separate these coffees by variety, microclimate, and harvesting timing, taste each one individually, and specifically design processing methods for each flavor profile to achieve a specific characteristic, much like how major fashion designers dedicate themselves to creating near-artistic masterpieces. Natural products undergo extensive refinement and improvement before presenting their most beautiful form to everyone.

Drima Zede: The Pinnacle of Natural Processing

The ancient natural processing method rarely achieves pure flavors, but Drima Zede, with Ninety Plus technical support, uses only hand-selected ripest coffee cherries. The natural drying process involves meticulous constant stirring to ensure uniformity. The final result is an exceptionally transparent and pure taste with dramatic changes between hot and cold temperatures, and captivating aromas of fruit, flowers, and oak barrels!

Candlelight: Refined Natural Elegance

Also an Ethiopian natural bean, Candlelight undergoes strict supervision and selection, avoiding the annoying earthy impurities and high defect rates common in natural beans, instead highlighting the captivating sweetness that makes natural processing renowned. Candlelight's enchanting fruit notes inherit the captivating aroma bestowed by traditional Ethiopian natural processing, unreservedly expressing a round, full-bodied sweetness with a long aftertaste and just the right amount of mouth-watering fruit acidity. Candlelight is also quite approachable for daily brewing—the beans themselves are rich in flavor, and they beautifully showcase their character whether using clean pour-over methods or rich Italian-style brewing.

Flavor Profile: 90+ Level Up Series Candlelight

Nectarine, tropical fruits, with a clean and bright mouthfeel. The initial impression is absolutely stunning.

The Ninety Plus Naming Philosophy

Ninety Plus beans take a completely different approach to naming compared to typical specialty beans—they don't use region and estate names. Each bean is named according to its flavor profile. For example, Candlelight means "best approach" in the local dialect. Starting from a flavor concept, then naming, followed by selection of regions and partner farms—this shows that Ninety Plus is a brand with boutique business style.
