Shakisso coffee possesses remarkable distinctiveness, and its produced coffee has consistently garnered market attention. The legendary Nekisse bean from Ninety Plus derives its original meaning from "Nectar from Shakisso," with both its production region and name originating from Shakisso.

The coffee flavors of Sidama are incredibly diverse. Due to different soil compositions, regional microclimates, and countless native coffee varieties, each town's area produces coffee with distinct differences and characteristics. The Sidama production region is located in southern Ethiopia, where agriculture dominates the industry, and coffee growing areas surround the Great Rift Valley.

Shakisso Region: Coffee and Gold

Shakisso, located in Guji, Oromia region, borders Sidama and Gedeo. This area contains numerous mining pits originally used for gold extraction, leaving many holes throughout the coffee growing region. This makes walking between coffee planting areas particularly dangerous. Shakisso stands as a unique production area within Guji/Sidama—remote even within Sidama and far from most coffee origins. The region's other famous product is gold. Factors such as miners, land disputes, and ethnic tensions made the area unstable in 2006. Consequently, this region now faces its greatest challenge: the need for manpower to maintain planting areas and harvest coffee.

Local smallholder farmers began growing organic coffee here in 2001, working closely with medium-sized coffee producers who understand how to cultivate forest coffee in highland regions.

Brewing Recommendations

For pour-over Sidamo: Use 15g of coffee grounds with medium-fine grinding (Komachi grinder setting 3.5). Brew with a V60 dripper using water at 91-93°C. First pour 30g of water for a 27-second bloom, then continue to 105g and pause. Wait until the water level drops halfway, then slowly pour until reaching 225g total. Avoid the tail end. Use a 1:15 coffee-to-water ratio with a total extraction time of 2:00.
