Shakisso, located in the Guji zone of the Oromia region, borders Sidama and Gedeo to the south. This area has numerous mining pits that were originally used for gold mining, which is why this coffee growing region has many holes. This makes walking through the coffee growing areas extremely dangerous. Shakisso is a unique production area within Guji/Sidamo, even within Sidamo it is a remote region far from most coffee producing areas, and the area's other famous product is gold mines. Factors such as miners, land, and ethnicity also made the region unstable in 2006. Therefore, the biggest problem facing this area now is the need for manpower to maintain the growing areas and harvest coffee. Local small farmers in this area began growing organic coffee in 2001 and work closely with medium-sized coffee producers because they are familiar with how to grow forest coffee in highland areas.

Brewing Instructions

Hand-pour Sidamo. 15g powder, medium-fine grind (Fuji ghost tooth grinder 3.5), V60 dripper, 91-93°C water temperature. First pour 30g water, let bloom for 27 seconds, pour to 105g then stop. Wait until the powder bed water level drops to half, then continue pouring slowly until 225g. Avoid the tail section. Water-to-coffee ratio 1:15, extraction time 2:00.
