Panama coffee has been the hottest country in Central America for the past 5-6 years, mainly because the Geisha coffee variety cultivated by the Peterson family at Hacienda La Esmeralda has driven coffee enthusiasts wild. Consequently, Geisha is acclaimed as the world's finest coffee bean. For this reason, the Panama Cup of Excellence auction is separate from the Central and South American cupping competitions and was the earliest auction country, held annually in mid-May. Panama coffee is impressive not only in the Geisha variety but also in continuously updating mid-range green bean processing methods. It includes not only traditional washed processing but also honey processing, which is most prevalent in neighboring Costa Rica. Additionally, naturally processed coffee, which has been gradually forming in Central America, is also produced in small quantities in Panama, attracting global coffee professionals' attention.

Coffee was introduced to Panama in 1780, when Europeans brought the first Typica trees. Since then, this mysterious and exotic beverage conquered the senses of Panamanians, and locals began widespread cultivation. Panama coffee is very smooth, with full, light beans and perfect acidity balance. Its premium coffee beans feature pure, highly distinctive flavors. Due to widespread popularity, most of Panama's premium coffee beans are exported to France and Finland.

Main Panama Coffee Growing Regions:

Boquete Region: This area produces coffee in large quantities with excellent quality, making it the region with the highest production and best quality in Panama.

Volcán Region: Coffee produced here is characterized by mild, balanced flavors and has gradually attracted attention from international experts and coffee enthusiasts. It is believed that soon it will match the Boquete region.

Santa Clara Region: Fertile coffee farms are irrigated and nourished by clear river water from the Chorerra waterfall, plus proximity to the Panama Canal allows fresh, pure Panama coffee to be conveniently transported worldwide.

Piedra de Candela Region: Considered to have great potential for developing high-quality specialty coffee.

This batch of coffee has the purest original flavors. Because Eleta Estate SHB washed coffee is harvested from high-altitude Catuai coffee beans, it carries strong fruity and floral notes. Flavor characteristics: creamy bread, almond sweetness, cane sugar sweetness, rounded acidity, complex aroma, balanced sweet and sour, pleasant mouthfeel.

Caturra is a natural variant of the Arabica Bourbon variety, discovered in Brazil in 1937. Its plant is not as tall as Bourbon, being more compact. Due to inheriting Bourbon lineage, its disease resistance is relatively weak, but its yield is higher than Bourbon. Although discovered in Brazil, Caturra is not suitable for growing there, so it wasn't cultivated on a large scale in Brazil. Instead, it became widely popular in Central and South American regions, with countries like Colombia, Costa Rica, and Nicaragua cultivating Caturra extensively.

Compared to these botanical characteristics, people might be more concerned about Caturra's flavor. The higher the altitude where Caturra is grown, the better the quality, but correspondingly, the lower the yield. When lightly roasted, Caturra shows pronounced acidic aromas and overall brightness. With proper processing, sweetness can perform excellently, but the coffee body is relatively lower compared to Bourbon, and mouthfeel cleanliness is somewhat lacking.

Typically, Caturra has red berries, but in extremely rare areas, there are yellow Caturra varieties. For example, Hawaii cultivates very small quantities of yellow Caturra.

Currently, the grading systems for coffee bean growing regions worldwide are not unified. Each coffee-producing country has its own grading system and grading names. Therefore, you might see the following terms on coffee packaging: "SHB," "AA+," "Supremo," "Extra-Fancy," "Peaberries / small fruits," etc. These are coffee bean grading names. Sometimes, roasted coffee beans sold on the market are labeled with single-origin coffee grades. The more detailed the coffee grading labeling, usually the better the coffee quality. However, regular coffee typically does not display this information.

Pour-over Panama Eleta: 15g coffee, medium grind (small Fuji ghost tooth grinder #4), V60 dripper, water temperature 88-89°C. First pour 30g water, bloom for 27 seconds. Pour to 105g and stop. Wait until the water level drops to halfway, then continue pouring slowly until reaching 225g. Avoid the tail section. Water-to-coffee ratio 1:15, extraction time 2:00.

Eleta Estate (Café de Eleta) is located in a small area of the Santa Clara region, just one kilometer from the Costa Rica border, near La Amistad International Park, a major primary forest reserve belonging to the Central American ecological habitat. Eleta Estate began acquiring land in the 1970s, covering approximately 130 hectares. Initially, it cultivated vegetables and operated livestock farming. In 1995, it started coffee cultivation and was named Café de Eleta S.A. It continued to expand land area until today, covering 420 hectares, making it one of Panama's large-scale coffee estates and one of Panama's best-known premium coffees. Due to abundant water resources, it has a private 530KW hydroelectric power plant. In addition to self-sufficient electricity, excess power is sold to Distribución de Electricidad Chiriquí S.A. for grid connection.
