Washed Processing Method

There are many variations of washed processing methods today, but generally, coffee cherries are harvested, floating beans are removed, then the pulp is removed, and the coffee beans are soaked in fermentation tanks. Enzymes in the water soften the mucilage attached to the parchment of the coffee beans, while natural yeasts break down the sugars in the mucilage. This process is called fermentation. After fermentation is complete, the coffee beans are moved to drying patios and sun-dried. During the drying process, the coffee beans need to be constantly turned to ensure even drying. Finally, they are stored in parchment in warehouses, and hulling and bagging are done only after green bean buyers place orders. Coffee processed this way has a clean taste, emphasizing bright, lively fruit acidity, as well as refreshing fruit flavors and floral notes.

Panama coffee is famous for the Geisha from Esmeralda Estate, and the region where Esmeralda Estate is located is also quite famous; that is the Boquete region in the Chiriqui province. Boquete is a town in Chiriqui province, situated near the border between Panama and Costa Rica, close to the famous Baru Volcano, with beautiful scenery, fertile soil, and climate and soil that are very suitable for producing high-quality coffee.

Within the Boquete region, there are also many excellent estates. Besides the famous Esmeralda Estate, there are also Elida Estate, and Akabá Estate, all of which are renowned estates producing high-quality specialty coffee. This is not only due to the superior ecological conditions of Panama's Boquete region and the fertile volcanic ash soil of the Baru volcano area. There is also an important factor: the microclimate in the highlands of Panama's Boquete is a unique resource for specialty coffee in the Boquete region. This is because Panama's east-to-west environment allows cold air currents to converge through the Central Mountains above 6500 feet, creating various microclimates in the Boquete area, making its temperature and rainfall very suitable for plant growth. Therefore, coffee trees growing here in this region thrive very well.

And in such a blessed growing environment as Boquete, there naturally wouldn't be just Esmeralda's Geisha as the only coffee king with outstanding flavor, quality, and value; but drinking Geisha every day I think is still quite luxurious, and even if there's no economic pressure, then it's like eating shark fin and bear paw every day, which is not appropriate either. The same goes for coffee - having a wide variety of exposure allows one to better enjoy the pleasure of tasting coffee.

Panama is a Central American country, bordering Costa Rica to the west and Colombia to the east. Those who know about single-origin coffee should all know that Panama coffee is famous in the coffee world for the Geisha from Esmeralda Estate (the famous name of Geisha). It can be said to be a country that pursues excellence in coffee and produces high-quality coffee.

Flavor: Tea aroma, honey, berries, classic Esmeralda Estate Geisha taste

So in the land of Boquete, there is a bean with particularly high cost performance. And it has a very beautiful name - Flower Butterfly. She has 40% of the excellent Geisha bloodline, composed of three varieties: Geisha, Caturra, and Catuai, grown in the Baru volcano area of Boquete, at an altitude of 1600 meters in the volcanic region. The processing plant uses meticulous washed processing. Panama's special local microclimate leads to abundant rainfall in this region, and large day-night temperature differences, combined with the unique volcanic rock soil of the volcanic area, as well as careful harvesting and meticulous processing, make this coffee perform exceptionally well in body, acidity, and floral notes.

What's even more surprising is that on top of excellent quality, the very affordable price makes this coffee bean's cost performance explode. The special thing about this coffee bean is that it's composed of three varieties, with 40% being Geisha variety, giving this coffee very obvious Geisha flavors. According to research data, due to historical reasons of the estate, in pursuit of yield at that time, early Geisha varieties were mixed and planted together with Caturra and Catuai variety coffee trees. To facilitate harvesting, coffee farmers did not reclassify them, but directly processed the three varieties together. Later, as Geisha became famous overnight and prices soared, the processing plant began to apply meticulous washed processing specifically to such coffee beans.
