Hand Brew Instructions

Hand-brewed Panama Butterfly Coffee: 15g of coffee, medium grind (Fuji ghost tooth grinder #4), V60 dripper, water temperature 88-89°C. First pour 30g water, bloom for 27 seconds. Pour to 105g and pause. Wait until the water level drops to half, then slowly pour until reaching 225g. Discard the tail section. Water-to-coffee ratio 1:15, extraction time 2:00.

The Boquete region in Panama is located in the Chiriquí province, bordering Costa Rica. It is the famous origin of Panama's renowned Geisha coffee and is world-famous for producing high-quality Arabica coffee. The Tedman & MacIntyre Estate, situated at 4,000 feet elevation in the Boquete mountains, originates from two of Panama's earliest coffee families: the Tedman family and the MacIntyre family.

But drinking Geisha daily is still quite luxurious, and even if there's no financial pressure, eating something like shark fin and bear paw every day wouldn't be appropriate. The Butterfly Coffee Story

It has 40% premium Geisha heritage, composed of three varieties: Geisha, Caturra, and Catuai. It's grown in the Barú Volcano region of Boquete, at an altitude of 1,600 meters in the volcanic area. The processing plant uses refined washed processing. Panama's special local microclimate results in abundant rainfall in this region, along with significant day-night temperature differences. Combined with the unique volcanic rock soil of the volcanic area, as well as careful harvesting and refined processing, this coffee performs exceptionally well in body, acidity, and floral notes.

What's even more surprising is that on top of its excellent quality, the very affordable price makes this coffee bean's value for money outstanding. The special feature of this coffee bean is that it's composed of three varieties, with 40% being Geisha, giving this coffee a very distinct Geisha flavor. According to research, due to the estate's historical reasons, when pursuing yield in the early days, the early Geisha varieties were mixed with Caturra and Catuai coffee trees. For convenience in harvesting, coffee farmers didn't reclassify them but directly processed all three varieties together. Later, when Geisha became famous and prices skyrocketed, the processing plant began refined washed processing specifically for this type of coffee bean.

There are many washed processing methods today, but generally, after coffee cherries are harvested, floating beans are removed, then the pulp is removed, and the coffee beans are soaked in fermentation tanks. Enzymes in the water soften the mucilage attached to the inner parchment of the coffee beans, and natural yeast breaks down the sugars in the mucilage - this process is called fermentation. After fermentation is complete, the coffee beans are moved to drying patios to dry. During the drying process, the beans need constant turning to ensure even drying. Finally, they're stored with parchment in warehouses, and hulling and bagging are done only after green bean buyers place orders. Coffee processed this way has a clean taste, emphasizing bright and lively fruit acidity, as well as clear fruit flavors and floral notes.
