Sidamo Coffee Region

Sidamo coffee flavors are incredibly diverse due to different soil compositions, regional microclimates, and countless native coffee varieties, resulting in distinct differences and characteristics in coffee produced by each town area. The Sidamo region is located in southern Ethiopia, where agriculture dominates the industry, and coffee growing areas are situated around the Great Rift Valley.

Shakisso Region

Shakisso, located in Guji, Oromia region in the south, borders Sidamo and Gedeo. This area contains many mining pits that were originally used for gold mining, leaving numerous holes throughout the coffee growing region, making it dangerous to walk between coffee plantations. Shakisso is a unique growing area within Guji/Sidamo, even within Sidamo it's a remote region far from most coffee-producing areas, while gold mining is another famous local product.

Factors such as miners, land, and ethnic tensions also caused instability in the region in 2006. Therefore, the biggest challenge this area faces now is the need for manpower to maintain the growing areas and harvest coffee. Local small farmers began growing organic coffee in 2001 and work closely with medium-sized coffee producers who are experienced in growing forest coffee in highland areas.

Brewing Method

Pour-over Sidamo: 15g of coffee, ground to medium-fine (Komachi grinder 3.5 setting), V60 dripper, water temperature 91-93°C. First pour 30g of water, let bloom for 27 seconds, then pour to 105g and pause. Wait until the water level drops to half in the coffee bed, then continue pouring slowly until reaching 225g total. Avoid the tail end. Water-to-coffee ratio 1:15, extraction time 2:00.
