Introduction

This coffee originates from a single farm in Ethiopia, processed by the Worka Cooperative. Alemayehu Alako Farm is a member of the Worka Cooperative.

The Worka Cooperative is located in the southern part of Gedeb district. It was established in 2005 and joined the renowned Yirgacheffe Coffee Farmers Cooperative Union (YCFCU) in the same year. The cooperative is famous for producing high-quality natural-processed Yirgacheffe coffee and has approximately 300 coffee farmers as members. YCFCU was established in 2002 and includes 26 other cooperatives, serving over 45,000 coffee farmers.

Flavor Profile

Distinctive floral notes with rich citrus aromatics in both dry and wet fragrance. The front palate reveals lemon, kumquat, white grape juice, and diverse vibrant flavors. The middle to back palate showcases rich citrus sweetness with a soda-like rich sweet sensation. The personality is distinctive, prominent, and exceptionally rare.

Ethiopia Coffee Grading System

In Ethiopia's coffee grading system, washed Grade 2 and natural Grade 4 are the highest grades. Therefore, historically, only Yirgacheffe WP G2 has been available on the market.

Note: Yirgacheffe G1 is a grade specially requested by Mitsubishi from the Ethiopia Coffee & Tea Authority. It first appeared on the market in 2002-2003. G1 grade beans are not produced through general screening methods but are strictly hand-selected from green beans in the Knoga area of Yirga village, which has the highest altitude and excellent soil. The green beans are nearly uniform in size, quite beautiful in appearance, and contain almost no defective beans. After tasting, they better express the characteristics of Yirgacheffe. Due to the strict production process, the annual output of Yirgacheffe G1 is quite scarce, averaging about 600 bags.

Yirgacheffe coffee is predominantly processed using the washed method, fermented in washing tanks for about 72 hours to remove parchment, and dried directly outside the processing plant. After manual selection of green beans, they pass quality inspection by the Ethiopia Coffee and Tea Authority and are exported through competitive bidding. The annual output is about 225,000 bags (60kg per bag). In the past, it was mainly sold to Northern Europe (primarily Germany) and Japan, but recently has also gained attention from North America.

Yirgacheffe Region

Yirgacheffe itself is a small town with about 20,000 people. The three neighboring small producing areas—Wenago, Kochere, and Gelena Abaya—are classified under the Yirgacheffe regional classification because their coffee flavors are almost identical to those from Yirgacheffe. Both culturally and geographically, Yirgacheffe is similar to the neighboring Sidamo, but Yirgacheffe seems to be especially favored with unique natural conditions. Top-quality Yirgacheffe coffee features floral notes, bright citrus fruit acidity, lemon-toned aromatics, and a silky smooth mouthfeel.

Brewing Recommendations

For pour-over washed Worka: Use 15g of coffee ground to medium-fine (Fuji Rokou grinder 3.5 setting). V60 dripper, water temperature 90-92°C. First pour 30g of water, let bloom for 27 seconds. Pour to 105g and stop. Wait until the water level drops halfway in the coffee bed, then continue pouring slowly until reaching 225g. Avoid the tail end. Water-to-coffee ratio 1:15, extraction time 2:00.

Processing Comparison

Compared to the traditional natural-processed Harrar region, natural-processed Yirgacheffe is not common. As the region where Ethiopia's first washing station was established, coffee enthusiasts are more familiar with the washed Yirgacheffe known for its elegant lemon and citrus characteristics.

Washed-processed coffee flavors are less likely to have wild characteristics, possessing pure and fresh qualities suitable for light roast levels. This washed Ethiopian coffee achieves the highest G1 grade, indicating it has very few defects.
