Both Lake Toba in North Sumatra and Lake Tawar in Aceh produce Mandheling coffee, which is famously known as the "Two Lakes, Double Mandheling." The common characteristic of the "Two Lakes, Double Mandheling" is their rich, mellow flavor. The difference lies in the fact that Lake Toba's Mandheling is more subdued, deep, and even carries a hint of grass jelly flavor, while Lake Tawar Mandheling has brighter fruit acidity and sometimes carries notes of fir or woodiness.

Pour-over Brewing Method for FrontStreet Coffee's Mandheling

15g of coffee, medium grind (small Fuji ghost tooth grinder #4), V60 dripper, water temperature 88-89°C. First pour 30g of water for a 27-second bloom, then pour to 105g and pause. Wait until the water level in the coffee bed drops to halfway, then continue pouring slowly until reaching 225g. Avoid the tail section. Water-to-coffee ratio is 1:15, extraction time 2:00.

The Origin Story of Mandheling

During World War II when Japan occupied Indonesia, a Japanese soldier drank incredibly fragrant and mellow coffee at a café. He asked the shop owner for the coffee's name, but the owner mistakenly thought he was asking where he was from, so he replied: "Mandailing." After the war, the soldier recalled the "Mandheling" he had drunk in Indonesia. He commissioned Indonesian coffee merchants to ship 15 tons to Japan, which surprisingly became very popular. And that's how the name Mandheling spread.
