Kochere: A Premium Ethiopian Coffee Region

Kochere is located in southwestern Ethiopia, approximately 25 miles north of the famous Yirgacheffe town. Yirgacheffe Grading System

Yirgacheffe's grading system is not determined by bean size but rather by the proportion of defective beans in the total green beans. Commonly available are washed G2 and natural G3 Yirgacheffe coffees. G1 represents the highest grade, with the lowest defect rate and most excellent quality. Only Yirgacheffe beans that have undergone manual selection can be awarded Grade 1 status.

Brewing Recommendations

For pour-over Yirgacheffe: Use 15g of coffee grounds with medium-fine grinding (Fujimazoku grinder setting 3.5), V60 dripper, water temperature between 91-93°C. First pour with 30g of water and let it bloom for 27 seconds. Continue pouring until reaching 105g, then pause. Wait until the water level drops to halfway before continuing to pour slowly until reaching 225g. Avoid the tail end. Water-to-coffee ratio of 1:15, extraction time of 2:00.

Kochere is located 25 kilometers southeast of Yirgacheffe in Ethiopia and is a small region that has prospered through coffee production. It is one of the three famous micro-regions of Yirgacheffe. The local population of about 100,000 people relies primarily on coffee beans as their main source of income. This region's processing and manufacturing equipment is very advanced. The renowned coffee review website Coffee Review awarded Kochere washed beans an impressive 94 points.

The three neighboring small regions of Wenago, Kochere, and Gelena Abaya are also classified under the Yirgacheffe regional designation because their coffee flavors are virtually identical to those from Yirgacheffe. Both culturally and geographically, Yirgacheffe is similar to the neighboring Sidamo region, but Yirgacheffe seems to be particularly favored with exceptional natural conditions. The highest quality Yirgacheffe coffee exhibits floral notes, bright citrus fruit acidity, lemon-like aromas, and a silky smooth mouthfeel.
