About Caturra Variety
Caturra is a single-gene variant of Bourbon, discovered in Brazil in 1937. It offers better yield and disease resistance than Bourbon, with shorter plant height that facilitates harvesting. However, like Bourbon, it suffers from biennial production cycles. Its strong adaptability allows it to thrive without shade trees under direct sunlight, earning it the name "Sun Coffee." While it can adapt to high-density planting, it requires more fertilization, increasing costs, which led to low initial acceptance among coffee farmers.
However, during the 1970s coffee price surge, farmers switched to Caturra to increase yields. With strong promotion by Brazilian and Colombian authorities, the results were remarkable. Farmers' acceptance of Caturra signaled a major transformation in cultivation techniques. Brazil and Colombia adopted high-yield, high-density sun cultivation methods. By 1990, one million hectares could harvest 14 million bags of coffee beans, increasing production by 60%. It's no wonder that high-yield, high-quality Caturra has become a key variety relied upon by coffee-producing countries.
Caturra is suitable for cultivation from low altitudes of 700 meters to high altitudes of 1700 meters, showing strong altitude adaptability. The higher the altitude, the better the flavor, though yield decreases accordingly—this is the destiny of specialty coffee. Academics describe Caturra as the intensive, sun-grown version of Bourbon, which is aptly put. There are also yellow Caturra variants (Caturra Amarello) in Central and South America, but their reputation doesn't match that of Yellow Bourbon.
When lightly roasted, Caturra exhibits pronounced acidity and overall brightness. With proper processing, it can display excellent sweetness. However, the body is relatively lower compared to Bourbon, and the mouthfeel lacks some cleanliness.
Typically, Caturra cherries are red, but in extremely rare regions, yellow Caturra exists. For example, Hawaii grows very limited quantities of yellow Caturra.
Brewing Method
Hand-poured Dunken. Use 15g of coffee grounds, medium grind (Komachi Fuji ghost tooth grinder #4), V60 dripper, water temperature 88-89°C. First pour 30g of water for a 27-second bloom, then pour to 105g and pause. Wait until the water level drops to halfway before continuing the pour. Slowly pour until reaching 225g total. Avoid the tail section. Water-to-coffee ratio is 1:15, extraction time 2:00.

The Dunken Estate
The "DUNken" estate produces unique "Premium Picking" and "Reserva Picking" methods. These practices push coffee to extremely high quality and flavor levels, but significantly reduce coffee yield. KOTOWA's focus on "Premium Picking" is that coffee cherries must only be harvested when they display a wine-red color (overripe dark color), and must be processed "immediately" and "quickly" after picking! The cost of achieving this flavor is extremely high. Another method, "Reserva Picking," is also called fully-ripe picking (Quickly Processed).
"Reserva Picking" doesn't solely use color as the picking standard—it must also judge sweetness and fruit pulp quality! Besides being 100% fully red, it must also be 100% fruit-sweet before picking, and only harvested when it tastes velvety sweet!

Altitude: 1250-1700 meters
Situated in the Baru volcanic region, it enjoys unique microclimate and volcanic terrain with abundant rainfall during growing season and distinct wet and dry seasons. Combined with volcanic lava flows, fertile volcanic black soil, and good drainage provide exceptional growing conditions, making the coffee aroma particularly captivating. The altitude here exceeds 1700 meters with strong winds, and many giant coniferous trees in the estate are over 200 years old.
Kotowa also places great importance on ecological environment, completely avoiding any chemical fertilizers. Instead, it uses cherry skins and pulp to create nutrient-rich compost to nourish coffee trees and give back to the land. Not only was Kotowa Coffee nominated by Panama's environmental agency as the recipient of the Panama National Environmental Protection Award in 2006, but this approach also creates the unique flavor of Dunken Estate coffee, producing exceptionally high-quality coffee beans that consistently achieve top rankings in BOP (Best of Panama).
