Hand Brew Preparation
Hand-brewed Yunnan Flower Fruit Mountain. Use 15g of coffee, medium grind (Fuji mountain grinder #4), V60 dripper, water temperature 88-89°C. First pour 30g of water for a 27-second bloom, then pour to 105g and pause. Wait until the water level drops halfway, then continue pouring slowly until reaching 225g. Avoid the tail section. Water-to-coffee ratio 1:15, extraction time 2:00.

Small bean coffee is suitable for growing on mountainous terrain at altitudes of 800-1800 meters. If the altitude is too high, the taste becomes sour; if too low, it becomes bitter. Most small bean coffee is planted in dry-hot valley regions around 1100 meters altitude, resulting in moderate acidity, rich fragrance, and mellow flavor. Many areas in Yunnan have unique environments suitable for small bean coffee cultivation, producing excellent quality small bean coffee.
The main cultivation areas are distributed in regions such as Lincang, Baoshan, Simao, Xishuangbanna, and Dehong. Baoshan has an average temperature of 21.5°C, reaching up to 40.4°C, with basically no frost year-round, making it the recognized best area for small bean coffee cultivation. The small bean coffee cultivated here is famous both domestically and internationally for being rich but not bitter, fragrant but not intense, with small uniform beans, rich mellow aroma, and fruity notes. International coffee organization tasting experts have evaluated Yunnan coffee as being in the same category as Colombian wet-processed small bean coffee, representing high-quality coffee worldwide.
Variety
Typica, this classic high-quality coffee variety, is the main cultivated variety for this batch of coffee. Typica coffee originates from southeastern Ethiopia and Sudan and is the most widely cultivated coffee variety in the Western Hemisphere. The plants are relatively robust but not tolerant to strong light, with higher yields in Hawaii. Typica's top leaves are bronze-colored, earning it the name red-top coffee.
