Santa Rita Estate is located in the region north of the Apaneca-Ilamatepec mountain range at approximately 5,000 feet. Santa Ana Volcano (also known as Volcan Santa Ana in Spanish) is situated in southwestern El Salvador, within Santa Ana Department, standing as the country's highest peak (2,362 meters [7,749 feet] to 2,381 meters). It is also a model estate for producing coffee beans in El Salvador.

Variety and Flavor Profile

El Salvador is one of the small countries in Central America. The local coffee is light-bodied, aromatic, pure, and slightly acidic, with excellent balance as its distinctive characteristic, making it a Central American specialty. It features equal characteristics of acidity, bitterness, and sweetness.

El Salvador coffee, alongside Mexico and Guatemala, ranks among the production countries of the Arabica group and is competing with other nations for the top one or two positions in Central America. High-altitude origin beans are uniformly large, rich in flavor, and smooth in taste. Like Guatemala and Costa Rica, El Salvador's coffee is graded by altitude, with higher altitudes producing better coffee. It is divided into three grades by elevation: SHB (Strictly High Grown) = high altitude, HEC (High Grown Central) = mid-high altitude, CS (Central Standard) = low altitude. The best brand is Pipil, which is the Aztec-Mayan name for coffee, and it has been certified by the Organic Certified Institute of America.

Tasting and Brewing

The flavor profile features wheatgrass, roasted nuts, maltose, a smooth milk cream texture, well-rounded acidity, brown sugar sweetness, and hazelnut chocolate notes.

Pour-over Santa Rita: 15g of coffee, medium grind (using Fuji's "ghost tooth" burr grinder, setting 4), V60 dripper, water temperature 88-89°C. First pour with 30g of water for a 27-second bloom, then pour to 105g and pause. Wait until the water level drops to halfway, then slowly pour until reaching 225g total. Avoid the tail end. Water-to-coffee ratio is 1:15, extraction time 2:00.

Yellow Bourbon: The fruit turns yellow when ripe. Originally discovered in Brazil, it is now mainly grown there. It is generally believed to be a hybrid mutation resulting from crossing red-fruited Bourbon with a yellow-fruited Typica variety called "Amerelo de Botocatu." Yellow Bourbon is one of the most outstanding quality varieties. While regular Bourbon changes from green to yellow to red, Yellow Bourbon maintains its yellow appearance throughout ripening. When grown at high altitudes and processed using natural sun-drying methods, Yellow Bourbon produces exceptional flavor.
