El Salvador coffee, along with Mexico and Guatemala, ranks among the top coffee-producing countries in Central America, competing with other nations for the top two positions in the region. High-altitude coffee from this region features uniformly large coffee beans with rich, mild flavor. Like Guatemala and Costa Rica, El Salvador's coffee is graded according to altitude—the higher the altitude, the better the coffee. It's divided into three grades based on elevation: SHB (strictly high grown) = highland, HEC (high grown central) = mid-highland, CS (central standard) = lowland. The best brand is Pipil, which is the Aztec-Mayan name for coffee, and it has received certification from the Organic Certified Institute of America.
Flavor Profile
The flavor features notes of wheatgrass, roasted nuts, maltose, smooth milk creaminess, well-rounded acidity, and sweetness reminiscent of brown sugar and hazelnut chocolate.
Brewing Method
Hand-poured Santa Rita: Use 15g of coffee ground to medium fineness (using a Fuji grinder with ghost tooth burrs at setting 4), V60 dripper, water temperature 88-89°C. First pour 30g of water and bloom for 27 seconds. Continue pouring to 105g, then pause. Wait until the water level drops to half before resuming pouring. Slowly pour until reaching 225g total. Avoid the tail end. Water-to-coffee ratio is 1:15, extraction time 2:00.

Yellow Bourbon, with yellow ripe fruit, was first discovered in Brazil and is now primarily grown there. It's generally believed to be a mutation resulting from hybridization between red-fruited Bourbon and a yellow-fruited Typica variant called "Amerelo de Botocatu." Yellow Bourbon is one of the most exceptional quality varieties. While regular Bourbon beans turn from green to yellow to red, Yellow Bourbon beans remain yellow. Yellow Bourbon grown at high altitudes and processed using natural sun-drying methods produces exceptional flavor.
