Catuai is a coffee variety artificially hybridized from Caturra and Mondu Novo. Catuai has good resistance to natural disasters, particularly strong resistance to wind and rain.

The Catuai coffee tree is relatively low-growing. Compared to other coffee trees, Catuai's fruits grow more firmly and are not easy to harvest. The fruits come in both red and yellow varieties. To date, no superior taste has been found in yellow fruits compared to red fruits. On the contrary, some people have discovered in cupping sessions that although coffee processed from some yellow fruits has good acidity, the cleanliness of the coffee's mouthfeel is inferior to that of red fruits.

Catuai was cultivated in Brazil and is currently widely planted in Central America as well.

However, in the Cerrado plateau of western Minas and South Minas, the altitude mostly exceeds 1100 meters. The terrain is rich and diverse, with distinct wet and dry seasons, large temperature variations between day and night, and abundant microclimates, making it suitable for cultivating elegant-flavored Bourbon and Yellow Bourbon varieties. This naturally became Brazil's main specialty coffee producing region. Additionally, Mogiana in the northeast of São Paulo province also mainly focuses on shade-grown Bourbon, ranking alongside Cerrado and South Minas as Brazil's three major specialty producing regions.

Brazil's terrain is flat, with most coffee farms situated at altitudes around 600-1000 meters. The landscape is flat and monotonous, lacking microclimates. Additionally, there's a customary practice of using non-shade tree cultivation methods, which has developed Brazil's unique soft bean flavor profile—low acidity, heavy nutty notes, chocolatey sweetness, good body, but with slight woody and earthy notes, while floral and citrus aromas are not prominent.

Minas Gerais is located in the heartland of the Brazilian plateau in the southeastern corner of South America, producing more than half of Brazil's high-quality Arabica coffee.

The Santo Antônio do Amparo region, which recently won the 2016 Brazil Cup of Excellence award, belongs to the core producing area of South Minas near the headquarters of the Brazilian Specialty Coffee Association (BSCA).

Brewing Method

Hand-pour Brazil. 15g of coffee, medium grind (using Fuji's ghost tooth grinder at setting 4), V60 dripper, water temperature 88-89°C. First pour 30g of water, let bloom for 27 seconds. Continue pouring to 105g and stop. Wait until the water level in the coffee bed drops to halfway, then continue pouring slowly until reaching 225g. Avoid the tail end. Water-to-coffee ratio is 1:15, extraction time 2:00.

The Bourbon variety originates from Bourbon Island or Ethiopia. It is susceptible to pests and diseases and has relatively low yields. Some data indicates that Yellow Bourbon has higher yields than Red Bourbon and Orange Bourbon, but Red Bourbon remains the most common variety. Bourbon has close genetic relationships with SL28, Typica, and Caturra. Because it tends to have lower yields in suitable environments, it often produces very high-quality cup profiles (evidence shows that lower yields often lead to higher quality, as plants can more effectively absorb soil nutrients).

The typical cup characteristics of Bourbon varieties include low body, balanced flavor profile, and distinct sweetness, making it an excellent base bean for espresso blends.
