Introduction to Yirgacheffe
Yirgacheffe itself is a small town with a population of about 20,000. The three adjacent small producing areas—Wenago, Kochere, and Gelena Abaya—are also classified under the Yirgacheffe region because their coffee flavors are virtually identical to those of Yirgacheffe. Both culturally and geographically, Yirgacheffe is similar to its neighboring Sidamo, but Yirgacheffe seems to be especially favored with uniquely advantageous conditions. Top-quality Yirgacheffe coffee features floral aromas, bright citrus acidity, lemon-toned notes, and a silky smooth mouthfeel.
Kochere Region
Kochere is located in southwestern Ethiopia, about 25 miles north of the famous Yirgacheffe town. The production model primarily involves local small farmers delivering their batches to cooperatives for unified processing. The local Chalalacktu village has about 100,000 people who rely on coffee for their livelihood, with related production activities becoming their main economic source. Due to the income from coffee production, the local standard of living is considerably better than many Ethiopian villages, with complete health facilities, higher education institutions, and other infrastructure. Advanced processing equipment has consistently enabled high-level performance in washed processing for Kochere region coffees, displaying clean sweetness with complex notes of molasses and citrus.

Yirgacheffe Grading System
Yirgacheffe's grading system is not determined by bean size but by the proportion of defective beans in the total batch. Commonly available are washed G2 and natural G3 Yirgacheffe. G1 is the highest grade—only the finest Yirgacheffe with the lowest defect rate undergoes additional manual selection to be rated as Grade 1.
Brewing Instructions
For pour-over Yirgacheffe: Use 15g of coffee, ground to medium-fine (small Fuji ghost tooth grinder setting 3.5), V60 dripper, water temperature 91-93°C. First pour 30g of water for a 27-second bloom, then pour to 105g and pause. Wait until the water level drops to half in the coffee bed, then continue pouring slowly until reaching 225g. Avoid the tail section. Water-to-coffee ratio is 1:15, extraction time 2:00.
