Yirgacheffe Grading System

The grading system for Yirgacheffe is not determined by bean size but by the proportion of defective beans in the total batch. Typically, you can find washed G2 and natural G3 Yirgacheffe coffees. G1 represents the highest grade, and only Yirgacheffe coffees with the lowest defect rate and most excellent quality, which then undergo hand sorting, can be rated as Grade 1.

Brewing Instructions

Hand-pour Yirgacheffe: 15g of coffee grounds, medium-fine grind (Fuji ghost tooth grinder setting 3.5), V60 dripper, water temperature 91-93°C. First pour 30g of water for a 27-second bloom, then pour to 105g and pause. Wait until the water level in the coffee bed drops to halfway, then continue pouring slowly until reaching 225g. Avoid the tail section. Water-to-coffee ratio 1:15, extraction time 2:00.

The local population is about 100,000 people, with coffee beans as the main source of income. The processing equipment in this region is very advanced. The renowned coffee review website Coffee Review gave Kochere washed beans a high rating of 94 points.

Yirgacheffe shares similar cultural and geographical environments with neighboring Sidamo, but Yirgacheffe seems to be particularly favored with exceptional natural conditions. The highest quality Yirgacheffe coffee features floral notes, bright citrus fruit acidity, lemon tones, and a silky smooth mouthfeel.
