Caturra Variety
Caturra is a single-gene mutation of Bourbon, discovered in Brazil in 1937. It has better yield and disease resistance than Bourbon, with shorter plants that facilitate harvesting. Unfortunately, like Bourbon, it suffers from biennial production cycles. However, its strong adaptability allows it to thrive without shade trees, earning it the name "Sun Coffee." It can adapt to high-density cultivation but requires more fertilization, increasing costs, so farmers were initially reluctant to accept it.
However, when coffee prices skyrocketed in the 1970s, farmers switched to Caturra to increase yields. With strong promotion from Brazilian and Colombian authorities, results were remarkable. Farmers' acceptance of Caturra signaled a major transformation in cultivation techniques. Brazil and Colombia adopted high-yield, high-density sun cultivation methods. By 1990, one million hectares could harvest 14 million bags of coffee beans, increasing production capacity by 60%. No wonder high-yield, high-quality Caturra has become a variety relied upon by various producing countries.
Caturra is suitable for cultivation from low altitudes of 700 meters to high altitudes of 1700 meters, showing strong altitude adaptability. The higher the altitude, the better the flavor, but with relatively reduced yield - this is the destiny of fine coffee. Some academics describe Caturra as the intensive and sun-grown version of Bourbon, which is quite apt. There is also a yellow Caturra variety (Caturra Amarello) in Central and South America, but its reputation doesn't match that of Yellow Bourbon.
When lightly roasted, Caturra exhibits prominent acidity and overall brightness. With proper handling, sweetness can be expressed exceptionally well, but the body is relatively lower compared to Bourbon, and the cleanliness of the aftertaste is somewhat lacking.
Typically, Caturra produces red cherries, but in extremely rare areas, yellow Caturra exists. For example, Hawaii cultivates very small quantities of yellow Caturra.
Brewing Method
Hand-poured Dunken. 15g of coffee, medium grind (Fuji ghost tooth grinder #4), V60 dripper, water temperature 88-89°C. First pour 30g of water for 27-second bloom, then pour to 105g and pause. Wait until the water level drops to half, then slowly pour until reaching 225g. Avoid the tail section. Water-to-coffee ratio 1:15, extraction time 2:00.

The "DUNCAN" estate produces unique 'Premium Picking' and 'Reserva Picking' methods, which push coffee to extremely high quality and flavor levels, while greatly reducing coffee production. KOTOWA's focus on 'Premium Picking' is that coffee cherries must be harvested only when they show wine-red color (overripe dark color), and must be processed "immediately" and "quickly" after picking! The cost of obtaining this flavor is extremely high. Another 'Reserva Picking' method is also called fully red picking (Quickly Processed).
'Reserva Picking' doesn't solely use color as the picking standard - it must judge sweetness and fruit pulp sweetness quality! Besides being 100% fully red, it must also be 100% fruit-sweet before picking, and only picked when it tastes velvety sweet!

Located in the Baru volcanic region, it possesses unique microclimate and volcanic terrain. During the growing season, rainfall is abundant with distinct wet and dry seasons. Additionally, volcanic lava flows have created fertile volcanic black soil with good drainage, providing exceptional growing conditions. The coffee produced here has particularly captivating aromas. The altitude here exceeds 1700 meters with strong winds, and there are many huge coniferous trees in the estate, all over 200 years old.
Kotowa also places great importance on ecological environment, completely avoiding any chemical fertilizers. Instead, it uses cherry skins and pulp to create high-nutrient compost to nourish coffee trees and give back to the land. Not only was Kotowa Coffee nominated as the winner of the Panama National Environmental Protection Award by Panama's environmental agency in 2006, but it has also created the unique flavor of Dunken Estate coffee, making the produced coffee beans of exceptional quality, consistently achieving top rankings in BOP.
