Santa Rita Estate

Santa Rita Estate is located in the northern region of the Apaneca-Ilamatepec mountains at approximately 5,000 feet elevation. Santa Ana Volcano (also known as Volcan Santa Ana in Spanish) is situated in southwestern El Salvador, within Santa Ana Department, standing as the country's highest peak at 2,362 meters (7,749 feet). It also serves as a model coffee estate in El Salvador for producing high-quality coffee beans.

El Salvador Coffee Characteristics

El Salvador is one of the smaller countries in Central America. The local coffee is characterized by its light body, aromatic quality, pure taste, and slight acidity. Its distinctive feature is excellent balance, making it a specialty of Central America. It exhibits equal characteristics of acidity, bitterness, and sweetness.

El Salvador coffee, alongside Mexico and Guatemala, ranks among the production countries of the Aztec-Maya region, and is competing for the top one or two positions in Central America. High-altitude origins produce large, uniformly-sized coffee beans with a fragrant and mild taste. Like Guatemala and Costa Rica, El Salvador's coffee is graded by altitude: the higher the altitude, the better the coffee. It's divided into three grades by elevation: SHB (Strictly High Grown) = high altitude, HEC (High Grown Central) = mid-high altitude, CS (Central Standard) = low altitude. The best brand is Pipil, which is the Aztec-Mayan term for coffee, and it has been certified by the Organic Certified Institute of America.

Tasting Notes and Brewing

The flavor profile includes wheatgrass, roasted nuts, maltose, a smooth milky cream texture, rounded acidity, brown sugar, and the sweetness of hazelnut chocolate.

Hand Brew Method

For hand-brewed Santa Rita: Use 15g of coffee, medium grind (Fuji mountain ghost tooth grinder #4), V60 dripper, water temperature 88-89°C. First pour 30g of water and let it bloom for 27 seconds. Pour to 105g and pause, wait until the water level drops to half before continuing to pour. Slowly pour until reaching 225g total. Avoid the tail section. Water-to-coffee ratio 1:15, extraction time 2:00 minutes.

Yellow Bourbon Variety

Yellow Bourbon, mature fruits are yellow in color, was first discovered in Brazil and currently grows mainly there. It is generally believed to be a mutation resulting from the hybridization of red-fruited Bourbon with a yellow-fruited Typica variety called "Amerelo de Botocatu." Yellow Bourbon is one of the most outstanding quality varieties. While regular Bourbon changes from green to yellow to red, Yellow Bourbon's appearance remains at the yellow stage. Yellow Bourbon grown at high altitudes and processed using natural methods yields exceptional flavor.
