Sidamo Coffee Characteristics

Sidamo coffee offers extremely diverse flavors due to different soil compositions, regional microclimates, and countless native coffee varieties, creating distinct differences and characteristics in coffee produced by each town and region. The Sidamo growing region is located in southern Ethiopia. Agriculture dominates the local economy, with coffee growing areas situated around the Great Rift Valley in East Africa.

Shakisso Region

Shakisso is located in Guji, Oromia region, bordering Sidama and Gedeo to the south. This area contains numerous mine pits, originally used for gold mining, leaving many holes throughout the coffee growing areas. This makes walking through coffee plantations extremely dangerous. Shakisso stands as a unique growing region within Guji/Sidamo, representing a remote area far from most coffee-producing zones even within Sidamo. Another famous local product is gold mining. Factors such as miners, land disputes, and ethnic tensions led to regional instability in 2006. Consequently, this region now faces its greatest challenge: the need for human resources to maintain growing areas and harvest coffee. Local small farmers began growing organic coffee in 2001, working closely with medium-sized coffee producers who possess expertise in high-altitude forest coffee cultivation.

Brewing Method

Pour-over Sidamo: 15g of coffee, medium-fine grind (Fuji ghost tooth grinder setting 3.5), V60 dripper, water temperature 91-93°C. First pour 30g of water for 27 seconds bloom, then pour to 105g and pause. Wait until the water level in the coffee bed drops to half before continuing to pour slowly until reaching 225g. Discard the tail end. Water-to-coffee ratio 1:15, extraction time 2:00.
