Shakisso, located in the Guji zone of the Oromia region, borders Sidama and Gedeo to the south. This area contains numerous mining pits that were originally excavated for gold mining, leaving many cavities throughout the coffee growing region. This makes walking through the coffee plantations extremely dangerous. Shakisso stands as a distinctive growing area within Guji/Sidamo, even within Sidamo itself as a remote region far from most coffee production areas. The area's other famous product is gold. Factors such as miners, land, and ethnic tensions also brought instability to the region in 2006. Therefore, the biggest challenge this region faces today is the need for manpower to maintain the plantations and harvest coffee. Local smallholder farmers began growing organic coffee here in 2001, working closely with medium-sized coffee producers who are well-versed in cultivating forest coffee in highland areas.

Brewing Method
Hand-pour Sidamo. Use 15g of coffee grounds, ground to medium-fine consistency (Fuji ghost tooth grinder setting 3.5), V60 dripper, water temperature 91-93°C. First pour 30g of water and let bloom for 27 seconds. Pour to 105g and pause. Wait until the water level drops halfway, then continue pouring slowly until reaching 225g. Avoid the tail end. Water-to-coffee ratio 1:15, extraction time 2:00.
