Brazilian Coffee Overview

In some estates of the Cerrado region in the state of Minas Gerais in southeastern Brazil, ancient Bourbon and Yellow Catuai coffees are cultivated. Although these estates come from the same region, each coffee possesses its own unique characteristics. Despite the diversity of coffee, Brazilian coffee suits popular tastes. As the largest coffee producing region, various grades and types of coffee account for one-third of global consumption, occupying a significant position in the global coffee trading market. Although Brazil faces natural disasters several times higher than other regions, its available planting area is sufficient to compensate.

Fazenda Primavera Yellow Catuai - Washed Processing

Flavor notes: Orange, peanut, roasted rice tea, nuts, caramel aftertaste, fresh orange juice-like sweet and sour sensation with smooth texture, typical sun-dried Brazilian flavor.

Yellow Catuai comes from a hybrid of Mundo Novo and Caturra, first cultivated in 1949 by the Instituto Agronomico de Campinas in Brazil. Like Red Catuai (Catuai rojo), Yellow Catuai has extremely high disease resistance and is suitable for cultivation at high altitudes.

Brazil HiU Micro Lot

The HiU program is a plan to improve coffee quality in Central and South America, proposed by Mr. Graciano Cruz from Panama, who is renowned for his honey processing method.

The program focuses on applying sun-drying or honey processing methods to micro lots, with final cupping scores exceeding 85 points to qualify for the HiU certification. This creates a win-win situation for both estate owners and processors.

Flavor notes: Orange, nuts, roasted rice tea, peanuts

Although there are numerous coffee varieties here, the industrial policy emphasizes quantity and affordability, so premium specialty coffees are not abundant, but they serve as excellent choices for blending with other coffees.

Brazilian Coffee Flavor Profile

Brazilian coffee features low acidity combined with sweet bitterness, offering an extremely smooth mouthfeel with a subtle grassy aroma. The light fragrance with slight bitterness creates a sweet, smooth, and pleasant taste, leaving a refreshing aftertaste. For Brazilian coffee, there are no particularly outstanding advantages, but no obvious drawbacks either. This flavor profile is mild and smooth, with low acidity, moderate body, and a subtle sweetness. The combination of all these gentle flavors provides the best test for the palate to distinguish each individual note.
