However, in the western part of Minas Gerais, the Cerrado Mineiro plateau and southern Minas Gerais have altitudes mostly above 1100 meters. They naturally became Brazil's main premium coffee producing regions. Additionally, Mogiana in the northeastern part of São Paulo state also focuses primarily on shade-grown Bourbon, ranking alongside Cerrado and southern Minas Gerais as Brazil's three major premium producing regions.
Brazil's terrain is generally flat, with most coffee farms situated at altitudes around 600-1000 meters. The landscape is flat and monotonous, lacking microclimates, and coffee is typically cultivated using a non-shade tree method. This has led to the development of Brazil's unique soft bean characteristics—low acidity, prominent nutty flavors, chocolate sweetness, excellent body, though sometimes with woody and earthy notes, while floral and citrus aromas are less pronounced.
