El Salvador is one of the small countries in Central America. The local coffee is light-bodied, aromatic, pure, and slightly acidic, with the distinctive characteristic of excellent balance. It is a specialty of Central America, featuring balanced flavors of acidity, bitterness, and sweetness.

El Salvador coffee ranks alongside Mexico and Guatemala as major producers in the region, competing for the top positions in Central America. High-altitude coffees feature uniformly large, full-bodied beans with rich, mild flavors. Like Guatemala and Costa Rica, El Salvador's coffee is graded by altitude—the higher the altitude, the better the coffee. It is divided into three grades by elevation: SHB (Strictly High Grown) = highland, HEC (High Grown Central) = mid-highland, CS (Central Standard) = lowland. The best brand is Pipil, which is the Aztec-Mayan name for coffee. It has been certified by the Organic Certified Institute of America.

Yellow Bourbon is a variety where ripe fruits are yellow in color. Originally discovered in Brazil, it is now mainly grown in Brazil. It is generally believed to have resulted from a mutation after hybridization between red-fruited Bourbon and a yellow-fruited Typica variant called "Amerelo de Botocatu." Yellow Bourbon is one of the most outstanding varieties in terms of quality. While regular Bourbon beans turn from green to yellow to red, Yellow Bourbon maintains its yellow appearance throughout ripening. Yellow Bourbon grown at high altitudes and processed using natural sun-drying methods produces exceptional flavors.

Santa Rita Estate is located in the region north of the Apaneca-Ilamatepec mountain range at approximately 5,000 feet altitude. Santa Ana Volcano (also known as Volcan Santa Ana in Spanish) is located in southwestern El Salvador, in Santa Ana Department. It is the country's highest peak at 2,362 meters (7,749 feet) to 2,381 meters. It is also a model estate for coffee bean production in El Salvador.

The flavor profile includes notes of wheatgrass, roasted nuts, and malt sugar, with a smooth mouthfeel reminiscent of milk creaminess. The acidity is well-rounded, complemented by sweet sensations of brown sugar and hazelnut chocolate.
