90+ Candlelight Sidamo Natural Premium Coffee Beans - Growing Conditions, Geographic Location, Climate, and Altitude Overview
Ethiopian Coffee Cultivation and Regions
In Ethiopia, various coffee cultivation methods can be found: from extensive wild coffee forests and semi-developed lands to traditional small-scale plots and modern plantations—everything is available. Approximately 50% of coffee is grown at altitudes above 1,500 meters. Based on these four different production methods, Ethiopian coffee can be divided into nine major coffee regions nationwide, including five specialty coffee areas: Sidamo, Yirgacheffe, Harar, Limmu, and Kaffa, as well as four general commercial bean production areas: Jimma, Illubabor, Tepi, and Bebeka. Each region employs either natural or washed processing methods, and different processing techniques affect the flavor profile. Currently, natural processing accounts for about 80%, while washed processing accounts for about 20%.
The Ninety Plus Coffee Philosophy
"Ninety Plus" does not refer to all coffees scoring above 90 points in evaluations. Good coffee may be available one year and absent the next. Sometimes it appears in different estates and possesses various flavor characteristics. "Ninety Plus" refers to a premium coffee series of 13 flavor profiles. These coffees come exclusively from Ninety Plus Coffee, an American specialty coffee creator. All are Ethiopian heirloom varieties, cultivated to maturity in ecological environments and processed to artistic standards for flavor optimization. The processing is Ninety Plus's specialty—they separate these coffees by variety, microclimate, and harvest timing, taste each one individually, and design specific processing methods for each flavor profile to achieve distinctive characteristics. Like designs from major brands, they dedicate themselves to meticulous research and invest considerable effort to complete products that approach artistic craftsmanship. Natural products undergo extensive refinement and improvement before reaching their most beautiful form and being presented to everyone.
Drima Zede: Exceptional Natural Processing
The ancient natural processing method rarely achieves pure flavor, but Drima Zede, with Ninety Plus technical support, uses only hand-selected ripest coffee cherries. The natural drying process involves meticulous constant stirring to ensure uniformity. The final result is an exceptionally transparent and pure taste with dramatic variations between hot and cold brewing, with captivating aromas of fruit, flowers, and oak barrels!
candle: Refined Ethiopian Natural Coffee
Also an Ethiopian natural coffee, Zhū Máng undergoes strict supervision and selection, avoiding the irritating earthy off-flavors and high defect rates common in typical natural beans. Instead, it highlights the captivating sweetness for which natural processing is renowned. Zhū Máng's enchanting fruity characteristics inherit the fascinating aromas bestowed by traditional Ethiopian natural processing, unreservedly expressing round, full-bodied sweetness with lingering aftertaste and perfectly appetite-stimulating fruit acidity. Zhū Máng is also quite approachable for daily brewing—the beans themselves are rich in flavor, and whether using clean drip brewing or rich siphon preparation, they beautifully showcase their inherent character.

The Ninety Plus Brand Philosophy
Ninety Plus beans adopt a completely different naming approach compared to conventional specialty beans—they don't use region and estate names. Each bean is named according to its flavor profile. For example, Zhū Máng means "best approach" in the local dialect. Starting from a flavor concept, they name the coffee, then proceed to select regions and partner farms. This demonstrates that Ninety Plus is a brand with boutique-style operations.
