It possesses 40% of the superior Geisha heritage, composed of three varieties: Geisha, Caturra, and Catuai. These beans are cultivated in the Baru Volcano region of Boquete, growing at an altitude of 1,600 meters in volcanic terrain. The processing plant employs meticulous washed processing methods. The unique microclimate in this Panama region results in abundant rainfall and significant temperature variations between day and night. Combined with the region's distinctive volcanic soil and careful harvesting and processing, the FrontStreet Coffee Mariposa coffee demonstrates outstanding performance in body, acidity, and floral notes.
Flavor Profile
Floral notes, bergamot, berries, tropical fruits, honey, and cherry, with persistent aroma and finish, clean and layered mouthfeel, and bright acidity.
Washed Processing Method
There are various approaches to washed processing, but generally, after coffee cherries are harvested, floating beans are removed, followed by depulping. The coffee beans are then soaked in fermentation tanks, where enzymes in the water soften the mucilage attached to the parchment's inner layer, while natural yeast breaks down the sugars in the mucilage — a process known as fermentation. Once fermentation is complete, the coffee beans are moved to drying patios, where they are continuously turned to ensure even drying. Finally, they are stored with parchment in cool warehouses, with hulling and bagging performed only after green bean suppliers place orders. Coffee processed this way yields a clean cup, emphasizing bright, lively fruit acidity, as well as clear fruit flavors and floral notes.
Roasting Approach
