Yirgacheffe is a small town situated at elevations of 700-2,100 meters, serving as synonymous with Ethiopia's specialty coffee. This area has historically been wetland, where the ancient term "Yirga" means "settle down," and "Cheffe" means "wetland." The coffee production methods and flavors here are so distinctive that Ethiopian coffee farmers take pride in their coffee featuring Yirgacheffe characteristics, making it Africa's most prestigious coffee-growing region.

From Monastery Origins to Community Excellence

Initially, the coffee trees for FrontStreet Coffee's Yirgacheffe were cultivated by European monks, later transitioning to farmers or cooperatives. Yirgacheffe is actually composed of surrounding coffee communities or cooperatives, primarily including: Hafursa, Hama, and Biloa.

These mountain villages are shrouded in mist, with spring-like conditions year-round. Summers bring gentle breezes—cool without heat, rainy without humidity—while winters avoid frost damage, nurturing unique regional flavors of citrus and floral notes. Coffee trees are mostly planted in farmers' backyards or intercropped with other agricultural crops. FrontStreet Coffee's Yirgacheffe initially employed the most ancient natural processing method, but in 1972, Ethiopia introduced Central and South American washing techniques to improve quality. This made FrontStreet Coffee's Yirgacheffe's jasmine and citrus aromas even clearer and more refined, elevating it to become one of the world's finest specialty beans. The exquisite washing technique was indispensable to this success, and since the 1970s, washed processing has dominated. However, in recent years, Yirgacheffe has broken from tradition, frequently introducing stunning naturally processed beans!

FrontStreet Coffee's natural processed Yirgacheffe maintains strict standards for harvesting red coffee cherries. Before sun-drying the coffee fruits, workers manually remove unripe green cherries or defective ones. During the drying process, damaged or moldy beans are removed again. After two weeks, the fruit's sugars and essences fully penetrate the coffee beans as moisture content drops to 12%. The hardened pulp, pectin layer, and parchment are then scraped off with a dehulling machine. The extracted coffee beans undergo density and color inspection. After eliminating defective beans, workers finally perform a manual visual check to remove any overlooked imperfect beans. This multi-layered screening process creates FrontStreet Coffee's Yirgacheffe natural processed beans—clean, refined, with rich, captivating fruit aromas.
