The addition of chocolate not only neutralizes the bitterness of coffee but also adds rich layers of flavor. Thanks to this, mocha coffee was deeply loved by consumers when it was launched. Although traditional mocha coffee is no longer popular today, its "variant" has broken through and become the rising star in the coffee world! That's right, it's the "Salted Mocha."
The Rise of Salted Mocha
The preparation of salted mocha is not very different from traditional mocha coffee - just a small pinch of salt added to the coffee creates a completely different change.
The sweetness becomes more prominent, and the aroma is more pronounced. Compared to traditional mocha coffee, the sweet and savory interplay of salted mocha seems more popular among modern consumers. That's why we can see many coffee shops have launched "Salted Mocha" products in recent years. So today, FrontStreet Coffee will share with everyone how to make the widely popular salted mocha coffee!
Required Ingredients
First, FrontStreet Coffee will introduce the ingredients needed shortly. They are all very easy to obtain: espresso/moka pot coffee, fresh milk/purified milk, chocolate/chocolate sauce or unsweetened chocolate powder, condensed milk, cream, and a small amount of salt.
Although the chocolate flavor will cover most of the coffee's taste, FrontStreet Coffee believes that the choice of coffee beans is also very important. Because when the flavor provided by coffee beans matches better with milk chocolate, the texture and taste of mocha coffee will be more outstanding. Therefore, FrontStreet Coffee suggests that if you want to make a very delicious salted mocha, it's best to choose coffee beans that pair well with chocolate flavor, such as medium-dark and dark roasted coffee beans.
Because these types of coffee beans will have rich nutty and chocolate flavors that pair very well with milk chocolate, without any abruptness. Super Rich Salted Mocha Recipe
First, we need to make the base of the salted mocha coffee. The base preparation is very simple - just mix espresso with chocolate products and other ingredients, stirring evenly. FrontStreet Coffee uses the following ratio: double espresso (20g coffee grounds for 30 seconds to yield 40ml), 8g unsweetened chocolate powder, 8g condensed milk, 5g chocolate sauce, 0.5g edible salt.
(If you don't have espresso, you can also use strong coffee extracted from a moka pot instead, but the concentration of moka pot coffee needs attention - you can refer to this article "Transfer Portal" for details)
Pour them all into the same container and stir with a bamboo whisk until there are no obvious granules.
Because FrontStreet Coffee is sharing the hot salted mocha first, after stirring the chocolate coffee base, we need to start frothing the milk. The milk frothing is the same as regular latte milk - thin milk foam, temperature around 65°C.
(Note: If the base uses moka pot strong coffee instead of espresso, you can choose to replace the milk with purified milk, which will improve the coffee's texture to some extent)
After frothing is complete, we can start mixing the two! There are two methods to choose from. The first is latte art, which is the method FrontStreet Coffee shared last October, so we won't elaborate on it here.
The other method is like a cappuccino, using milk foam to create a donut-like appearance. The method is very simple: First, we scoop 2-3 spoons of milk foam and lay it in the middle of the coffee. (Note: The area of milk foam should be as large as possible)
After laying it down, we concentrate all the remaining milk foam in the center and pour until the cup is full (200ml).
Finally, we just need to sprinkle some chocolate powder/chocolate shavings to enhance the aroma of this salted mocha, and a fragrant and delicious salted mocha is complete! (It's best to concentrate the chocolate powder in the middle when sprinkling, otherwise you'll end up with the situation in the picture below where the coffee "donut" was wasted because it was covered by powder)
Iced Salted Mocha Version
Compared to last year's version, FrontStreet Coffee thinks this year's version has a rich aroma while not being too heavy when drinking, making it more friendly for friends who don't like overly sweet things.
The iced version is much simpler! Last year, FrontStreet Coffee shared an iced shaken version, so this year we'll share a regular version. The coffee base preparation is still the same, but you can add 5g more chocolate sauce and 0.5g more salt on the original basis. When the chocolate coffee base is ready, we set it aside!
Then take out an iced glass and use chocolate sauce to coat the inside of the glass. (It's best to chill the chocolate sauce before coating to reduce its fluidity and prevent situations like the one below...)
Then add 120g of ice cubes and 180ml of iced milk to the glass.
Then we pour in the previously prepared chocolate coffee base.
Finally, top with milk foam or whipped cream, then sprinkle with chocolate powder/shavings, and you can even add some chocolate blocks or cookies for decoration. An iced salted mocha is complete!
Compared to the hot version, the iced salted mocha tastes equally rich and fragrant, but in comparison, its texture is smoother and more refreshing. But be careful, before tasting, it's best to stir with a straw to fully blend the chocolate coffee with milk, so the coffee will be more delicious.
