In the past, when we purchased food, we would always check the production date and then look at the expiration date, because it's common knowledge that food past its expiration date should not be consumed.

However, when it comes to coffee beans, the production date refers to the roasting date - the time when raw coffee beans are roasted. But we pay attention to this roasting date not because we're worried about it expiring, as roasted coffee beans typically have a shelf life of six months to one year. Under normal circumstances, a bag of coffee beans wouldn't be left until it expires (unless it doesn't taste good to begin with).

Why Check the Roasting Date?

So why do we still check the roasting date? It's to experience the best flavor of these beans. Today, most single-origin coffee beans pursue fresh roasting. This is related to the current preference for lighter roasts. Lightly roasted coffee beans lose their flavor much faster than dark roasts. Generally, around 1 week after roasting, they emit pleasant aromas like flowers, fruits, and cookies. However, after 2 months, these pleasant aromas in lightly roasted coffee beans significantly diminish and are accompanied by smoky, almond, and grassy notes. Therefore, for pour-over single-origin coffee beans, a fresher roasting date is pursued.

The Importance of Resting Period

However, coffee beans closer to the roasting date are not necessarily the best tasting. There are two reasons for this: first, the need to release an appropriate amount of carbon dioxide, and second, to reduce the "roasted" sensation brought by the roasting process. The most prominent characteristic of freshly roasted coffee beans is vigorous degassing, and this "gas" actually refers to carbon dioxide. After coffee beans are roasted, they begin to release large amounts of carbon dioxide. The presence of carbon dioxide actually creates certain obstacles to our coffee extraction process.

After roasting, carbon dioxide exists in the loose structure of coffee beans. During the extraction process, the presence of carbon dioxide hinders water from entering these fiber structures to dissolve the flavor substances in the coffee. The higher the carbon dioxide content, the stronger the hindrance effect on water.

Optimal Flavor Period

The optimal flavor period for coffee generally occurs after the coffee is roasted, experiencing a 4-7 day resting period before reaching its flavor peak, after which flavors will diminish over time, eventually leaving only woody notes. The first flavor substances to dissipate are mainly volatile compounds such as floral and fruity aromas, while water-soluble compounds like sugars, nuts, and chocolate are relatively less volatile.

Therefore, the optimal flavor period for lightly roasted coffee beans is generally recommended from day 4 to day 40 after roasting. Dark roasted coffee beans or espresso beans require a longer resting time, approximately 1-2 weeks.
