There are many main factors that influence coffee flavor, mostly including coffee varieties, climate, geography, processing methods, and coffee roasting. The combination of these elements are the primary factors affecting coffee flavor. The Coffee Roasting Process

Roasting is the process of transforming coffee beans from raw to cooked. Different roasting levels produce various flavors such as acidity, bitterness, and sweetness. The roasting process mainly includes the following 4 key points:

Key Elements of Coffee Roasting

1. Roasting equipment must have the capability to heat raw beans to above 240°C.

2. Air is used as the heat transfer medium.

3. Raw beans must be stirred during the roasting process to ensure even heat transfer.

4. After roasting is complete, high-temperature coffee beans must be rapidly cooled to room temperature.

Coffee Roasting Levels

According to different roasting degrees, from dark to light, they can be mainly divided into 8 roasting levels: Italian Roast, French Roast, Dark Roast, City Roast, Medium-Dark Roast, Medium Roast, Light Roast, and Very Light Roast. The longer the roasting time, the acidity gradually diminishes while bitterness intensifies.
