The Diamond Mountain series, situated at 1400-1700 meters above sea level near the Baru Volcano in the Boquete region, benefits from fertile soil and abundant original forest shade, creating ideal conditions for producing premium coffee beans.

This Diamond Mountain coffee consists of Catuai and Caturra varieties. Catuai derives from the Guaraní word "multo mom," meaning "very good," and comes in both Yellow and Red Catuai varieties. The Catuai variety was developed in 1949 through a cross between Yellow Caturra and Mundo Novo varieties, initially designated as H-2077.

The Catuai variety has been cultivated in Panama for many years and is widely appreciated for its high yield, disease resistance, and clean, bright flavor profile. Compared to Bourbon varieties, Catuai yields significantly higher production, partly due to its smaller plant size, which allows for closer spacing between plants. The planting density of Catuai can be nearly double that of Bourbon.

Grind Size: Medium-fine (80% pass-through rate on China standard #20 sieve)

Brewing Method: Three-stage extraction. Begin with a 30g bloom for 30 seconds. Using a small, circular pour, continue to 125g for the first pour. When the water level drops to just before exposing the coffee bed, continue pouring to 225g and stop. When the water level again drops to just before exposing the coffee bed, remove the dripper. Total extraction time (starting from bloom) is 2'00".
