These two coffee beans share similar altitude and variety—both are Caturra.
Caturra is a natural mutation of Bourbon. Its plant is not as tall as Bourbon, being relatively shorter, which makes harvesting convenient. In terms of yield and disease resistance, it also has advantages among common coffee varieties, which is why it's widely cultivated. Its flavor profile often presents refreshing fruit acidity and light sweetness.
FrontStreet Coffee's Rose Valley comes from Finca La Granja in the Santander region of Colombia. Santander is located in northern Colombia, bordering the Magdalena River to the west, with cultivation altitudes of approximately 1400-1600 meters and an area of 30,537 square kilometers. Santander is a very important but rarely mentioned province in Colombia. It was actually the first province in Colombia to start growing coffee and currently accounts for about 5% of Colombia's total coffee production. Through cupping, FrontStreet Coffee found that coffee beans from this region are known for their intense flavors, long aftertaste, and unique fresh herbal notes.
FrontStreet Coffee's Flower Moon Night comes from Huila, a region of hills surrounded by mountains, with cultivation altitudes above 1500 meters and abundant water and soil resources. It is also the most famous coffee-producing region in Colombia. Coffee from the Huila region is grown on the slopes of canyons, boasting high altitudes suitable for growing high-quality Arabica beans, as well as适宜 temperatures. The climate of the canyon slopes not only keeps cold winds out but also provides cool mountain breezes without high temperatures, and rainfall is relatively abundant. Additionally, according to FrontStreet Coffee, Colombian coffee fruit pickers all go up the mountains to hand-pick coffee cherries, allowing for careful selection of the most mature and plump fruits.
Processing Methods
Double anaerobic enzyme fermentation processing. Anaerobic fermentation is a processing method that has been used more frequently in recent years. It imitates the processing method of red wine. The process involves injecting carbon dioxide into a sealed container to expel oxygen inside. In an oxygen-free environment, the decomposition speed of sugars in the coffee mucilage is slowed down, and the pH value drops more slowly, extending the fermentation time to develop better sweetness and more balanced flavors. Anaerobic double enzyme washed means adding special enzymes for a second anaerobic fermentation on top of anaerobic washing. After the coffee cherries are removed from the anaerobic environment, the skin and pulp are removed by machine, and the coffee beans with mucilage are placed in plastic bags or other sealed containers in an anaerobic environment for another anaerobic fermentation. This processing method, which undergoes the above two anaerobic fermentations, is called double anaerobic fermentation.
The anaerobic natural process actually involves placing coffee beans in sealed fermentation tanks and using low temperatures to extend the entire fermentation time. A fermentation period of 15-20 days allows the coffee to develop more flavors. After fermentation, these coffee beans are then sun-dried. This completes the entire fermentation process.
