How to Brew Large-Batch Pour-Over Coffee? How to Use the V60 #02 Dripper? How Many Cups from 30g of Coffee?
Brewing Multiple Cups of Coffee: How to Scale Up Your Pour Over
FrontStreet Coffee has always used 1-2 person drippers for our preparations, with our standard coffee dose consistently controlled at 15g. Therefore, all of FrontStreet Coffee's pour over tutorials are based on the brewing standard for one serving (one cup). Recently, some friends have asked: How do you brew 2-3 cups of coffee at once?
When friends ask this question, it shows they already have some experience with brewing one serving of coffee and have discovered that brewing multiple cups isn't as simple as just adding more coffee grounds.
According to FrontStreet Coffee's brewing standards, one cup of coffee is 200ml (with 15g of coffee grounds), so two cups would be 400ml, requiring 30g of coffee grounds. At this point, the size 01 dripper for 1-2 people becomes inadequate (the small size 01 dripper is suitable for 10-20g of grounds). To brew with more grounds, you'll need to use the larger size 02 dripper.
Take Hario's V60 dripper as an example: the size 02 dripper looks like an enlarged version of the size 01 dripper, suitable for brewing with 20g or more of coffee grounds. FrontStreet Coffee has always emphasized the five major factors that affect coffee (dose, ratio, grind size, water temperature, and technique). This time, the changing factor is the dose, so we conducted a brewing experiment focusing on this single variable.
Initial Brewing Parameters
Coffee beans: FrontStreet Coffee Colombia·La Divisa Sidra
Dose: 30g
Coffee-to-water ratio: 1:15, meaning 30g to 450ml
Grind size: 80% pass-through rate on #20 standard sieve
Water temperature: 91°C
Technique: Three-stage pour (60/190/200)
Dripper: V60 #02
The total extraction time was 2 minutes and 53 seconds. With only the dripper and dose changed while keeping everything else the same, the 30g dose produced a more intense flavor with bitterness. This occurred because the extraction time was too long, and the coffee became bitter from over-extraction.
FrontStreet Coffee discovered during the brewing process that because the water volume doubled, the time spent pouring also increased. Additionally, although the larger V60 dripper has a bigger bottom hole, clogging still occurred.
Parameter Adjustments
To address this situation, FrontStreet Coffee made fine adjustments to the parameters. Since the bitterness was caused by excessive coffee steeping time, it was clear that the coffee-to-water ratio and water temperature weren't the main factors. Therefore, we needed to focus on the grind size and pouring technique.
With double the amount of coffee, the coffee bed thickness increased by at least half. A thicker coffee bed naturally retains water better than a thinner one, so we needed to appropriately coarsen the coffee grind to ensure their water retention capacity remained comparable.
Another factor is the pouring flow rate. This involves the relationship between speed (flow rate), time, and distance (water volume). With the flow rate remaining constant but the total water volume increased, the time required will naturally increase. To control the time variable, we need to increase the pouring flow rate.
Adjusted Brewing Parameters
Dose: 30g
Coffee-to-water ratio: 1:15, meaning 30g to 450ml
Grind size: 75% pass-through rate on #20 standard sieve
Water temperature: 91°C
Technique: Three-stage pour (60/190/200) with flow rate of 7-8g/s
Dripper: V60 #02
These are the fine-tuned parameters. Through practical brewing, the extraction time was 2 minutes and 30 seconds. The flavor was now comparable to brewing a single serving. Some friends might also ask: Can I brew a larger dose using a size 01 dripper if I don't have a size 02? The answer is: Yes, you can!
Although we only discussed how to brew with 30g of coffee this time, we believe that clever readers have already learned to apply these principles by extension.
