These caramel flavors are influenced by every part of the growing, production, and roasting process. First, the soil where the coffee beans are grown may have high potassium content and balanced pH levels, allowing the coffee plants to absorb minerals. Then, coffee cherries are harvested at peak ripeness, allowing sugars from the pulp to enter the coffee beans. The processing methods for producing sweet beans are typically semi-washed or honey-processed. True Kona coffee is indeed a rare treasure, not easily found. The best Kona coffee is graded into three levels: Extra Fancy, Fancy, and Number One. These three grades are produced both on estates and under natural conditions. Most coffees on the market that call themselves "Kona" contain less than 5% genuine Hawaiian Kona coffee.
