Frontsteet-Ethiopia Sidamo Natural Introduction
This coffee bean comes from the renowned Sidamo region in Ethiopia, Africa. It once scored 95 points on the professional coffee cupping website Coffee Review in the United States. This is a high-shelf natural processed coffee from the Yidu processing plant in Sidamo.
Coffee produced by the Yidu processing plant has uniform bean size and constantly exudes a rich fruity aroma. Local farmers use manual selection to pick coffee cherries with moderate ripeness for high-shelf natural processing. During the 15-17 day natural drying process, workers manually turn the coffee cherries on the shelves every two hours to ensure even drying, after which the coffee is hulled and packaged.
The processing method at the Yidu plant differs from other natural processing methods in Ethiopia. Yidu manually selects defective beans before drying, rather than after processing is complete. Of course, after obtaining the green beans, the Yidu processing plant conducts another manual selection of defective beans, so Yidu's green beans undergo one additional defect selection step compared to other processing plants! During the drying process, elevated shelves are also used, which not only increases air circulation but also prevents coffee cherries from absorbing undesirable flavors during drying.
