Granja La Farm is located in the Santander region of Colombia. The Santander region is a famous producing area in northern Colombia, bordering the Magdalena River to the west, with growing altitudes of approximately 1400-1600 meters. Coffee beans from this region are known for their intense flavor, long-lasting aftertaste, and unique fresh herbal notes.

Granja La Estate

Granja La Farm owner Vargas has been growing coffee at Granja La Farm for 20 years. At Granja La Farm, only fully ripe, bright red coffee cherries are selected for picking. Through washing, defective floating beans are removed, followed by two rounds of anaerobic fermentation with special enzyme groups. Great attention is also paid to the drying process of coffee beans, avoiding excessive temperatures during drying and adopting a slow drying method.

Processing Method

Through washing, defective coffee beans are removed, and finally the processed coffee beans are placed in a sealed container. Carbon dioxide is injected to displace oxygen, slowing down the decomposition rate of sugars in the coffee mucilage in an oxygen-free environment. The pH also decreases at a slower rate, extending the fermentation time to develop better sweetness and more balanced flavors in the coffee.

Caturra

Caturra is a natural variant of Bourbon, discovered in Brazil in 1937. Its tree structure is not as tall as Bourbon, but more compact. Caturra is suitable for cultivation at altitudes of 700-1750 meters—the higher the altitude, the better the flavor. It often exhibits refreshing fruit acidity and subtle sweetness in its flavor profile.

When lightly roasted, Caturra shows distinct acidic aromas and overall brightness. With proper processing, its sweetness can be expressed exceptionally well. However, compared to Bourbon, its body is relatively lighter, and the cleanliness of the mouthfeel is somewhat lacking.

Typically, Caturra produces red berries, but in very rare regions, there are yellow Caturra varieties. For example, Hawaii cultivates very limited quantities of yellow Caturra.
