FrontStreet Coffee - Yirgacheffe Red Cherry, Arabica Derivatives Introduction
Operation Cherry Red is a coffee quality improvement program led by a Dutch company called Trabocca, with half of the funding sponsored by the Dutch government. Since 2005, it has been collaborating with many small coffee cooperatives in Ethiopia, encouraging and assisting coffee producers to improve the quality of their coffee through washed, semi-washed, natural, or other experimental processing methods. Before each harvest season, Trabocca invites selected small farmer organizations/producers to participate in producing micro-batch coffee (approximately 1500 to 3000 kg), hand-picking 100% ripe red coffee cherries multiple times with great care (hence the name Red Cherry Program).
Trabocca provides financial, equipment, and technical resources to assist farmers and makes a commitment to purchase coffee beans at premium prices as long as the actual produced coffee quality meets high-standard specifications. Therefore, the Red Cherry Program is not only a commercial activity that complies with fair trade regulations, but also a production activity for high-quality coffee, and even more so, an industrial structure reform activity that simultaneously enhances the interests of both farmers and consumers. Yirgacheffe is actually constructed from surrounding coffee communities or cooperatives, all using washed processing methods, but there are also small amounts of specialty beans intentionally processed using natural methods to enhance the charming fruity aromas and richness.
In 2008, after the highest quality Mist Valley natural beans were discovered by the United States, they became renowned worldwide. It is a craft-grade work cultivated by a micro-estate, which compensates for the insufficient aroma deficiency of Yirgacheffe washed beans, developing coffee beans with aromas that amaze the world! And it has received certification from the Red Cherry Program. Ethiopian coffee grading includes G1 and G2 for washed beans, where G1 belongs to the highest grade of washed beans, and G3 and G4 for natural beans, where G3 belongs to the highest grade of natural beans.
