FrontStreet Coffee Colombia Sunflower Estate Pink Bourbon Washed Introduction

This batch introduced by FrontStreet Coffee is the Pink Bourbon from Sunflower Estate in Huila, Colombia. FrontStreet Coffee's Colombian Pink Bourbon is first and foremost a bean that tastes "not very Colombian." Why is that? Because its flavor profile is somewhat similar to FrontStreet Coffee's Kenyan coffee, featuring bright red fruit acidity.

Pink Bourbon is a hybrid of Red Bourbon and Yellow Bourbon. The success rate of hybridization is relatively low, making Pink Bourbon quite rare. It possesses strong disease resistance. While both Yellow Bourbon and Red Bourbon have stable reproductive characteristics, the new Pink Bourbon variety resulting from their crossbreeding is difficult to produce consistently. Due to the challenges in cultivation, estate owners handle the processing with exceptional care. All washing and drying are conducted on rooftops, with freshly harvested fruits processed immediately, ensuring the washed coffee presents exceptionally clean flavor profiles.

Pink Bourbon, due to its extreme rarity, was previously unknown. It is a hybrid cross of Yellow Bourbon and Red Bourbon, featuring particularly strong disease resistance, exceptional flavor, but is very difficult to maintain stable production with extremely low yields. Another challenge lies in manual harvesting, which also contributes to the high grade of green beans for this small-batch specialty coffee.

Brewing Parameters

V60 Dripper
Grind: BG-6S
Recommended extraction ratio: 1:15-1:18 (concentration can be adjusted according to personal taste preference)

30g of water for 30s bloom, start timing when water injection begins. Second water injection to 125g segmented portion. When water level drops to just before exposing the coffee bed, perform third water injection to 225g and stop. When water level drops to just before exposing the coffee bed, remove the dripper. Total extraction time: 2:00.
