Brewing Recipe

Selected Beans: New Luomiqi

Filter Cup Used: LILY flat-bottom filter cup

Grind Size: Ditting KR804 grind level 7

Dose: 18g of coffee grounds, 1:13 coffee-to-water ratio

Pouring Method: Three-stage pouring. First stage: pour 40g of 92°C hot water. Second stage: pour 100g of 93°C hot water. Final stage: pour 100g of 70°C hot water.

Total Time: 1 minute 40 seconds

Using 18g of coffee grounds and pouring 240g of hot water, with a total water-coffee contact time of 1:40 seconds. Using Ditting KR804 at grind level 7, a finer grind allows substances within the coffee particles to be extracted more easily, thereby enhancing the sweetness and flavor in the cup.

The entire extraction process is divided into three stages of pouring:

In the first stage, pour 40g of 92°C water at a speed of 6-8g/s for a 30-second bloom. The slower pouring speed extends the water-coffee contact time, highlighting the acidity and flavor of the coffee.

In the second stage, pour 100g of 92°C water using a high-water-level, low-angle concentric circle method. During this stage, the coffee contains a large amount of flavor compounds, so increasing the agitation extracts more positive substances and enhances sweetness.

In the final stage, use 70°C water with a high flow rate to pour the remaining 100g. The low water temperature and high flow rate prevent the bitterness and astringency that can result from over-extraction of fine particles, making the coffee taste cleaner.

The appreciation of pour-over coffee should, of course, follow the tasting steps! First, smell, then take a small sip to feel the flavors, swallow, and experience the aftertaste and lingering notes.
