Why do we say this?

Because Sidamo grows in the famous specialty coffee region of southern Ethiopia. The coffee beans are organically cultivated, with each bean hand-picked by workers, ensuring not only excellent flavor but also quality.

A light sip reveals its clear fruit acidity, smooth texture, and delicate floral aroma. The perfect balance of acidity and sweetness, elegant and serene, resembles a little fairy naturally scented while wandering among flowers.

90+ American specialty coffee beans—these beans sourced by 90+ are all exceptional, each deserving to be called the pinnacle of specialty coffee. Additionally, 90+ beans differ from regular specialty beans in their naming approach—each bean is named according to its flavor profile. For instance, Sidamo can also be called 90+ Ardi, which means "Best Approach" in the local dialect.

However, the natural processing method makes it difficult to achieve pure flavors. With 90+ technical support, only the most ripe coffee cherries are selected by hand. You can sense its rich aroma even before sipping—it blends fruit flavors with a smooth texture and viscosity, with lingering maple and Earl Grey tea notes in the finish. It's a deep orange, romantic coffee.

The so-called coffee bean processing method refers to the process of removing the fruit pulp to extract the coffee beans (seeds with parchment) after harvesting the coffee fruit. The natural processing method, as the name suggests, uses sun exposure to dry the fruit skin and pulp before removal. Because it doesn't require complex processing steps, this method's advantage is that it can be done without large-scale facilities, and drying with the fruit intact can enhance the coffee beans' sweetness, floral notes, and wine-like aromas.

However, it has quite a few drawbacks—naturally processed quality is heavily influenced by weather. Insufficient sunlight leads to incomplete drying, excessive exposure causes over-fermentation, or inadequate manual supervision and turning can all result in flavor variations.

Therefore, while the natural method has the potential to create amazing flavors, its success rate is relatively low. It requires countless attempts from green bean suppliers to find exceptionally flavorful coffee beans among many朴实 unremarkable natural processed coffees.
